Steps:
- Adjust the rack in the lower third of the oven and heat the oven to 350 degrees F. Spray a 9 x 5 x 3-inch loaf pan with nonstick cooking spray. Sift the flour, sugar, baking powder, baking soda and salt into a large bowl. Stir in the walnuts. Combine the banana, eggs, yogurt, oil and vanilla; add to the flour mixture. Stir until just combined. Spoon the batter into the prepared pan. Bake for 1 hour, or until a cake tester inserted in the loaf comes out clean. Cool 10 minutes in the pan, then turn the loaf out onto a rack to cool completely.
Tips:
- Use ripe bananas: The riper the bananas, the sweeter and more flavorful your bread will be.
- Cream the butter and sugar together until light and fluffy: This will help to create a smooth, even crumb.
- Add the eggs one at a time, beating well after each addition: This will help to prevent the batter from curdling.
- Stir in the mashed bananas: Make sure to mix them in gently so that you don't overmix the batter.
- Fold in the dry ingredients: Be careful not to overmix the batter, as this can make the bread tough.
- Pour the batter into a greased and floured loaf pan: Make sure to smooth out the top of the batter.
- Bake the bread at 350 degrees Fahrenheit for 55-65 minutes, or until a toothpick inserted into the center comes out clean: Check the bread after 50 minutes to make sure that it's not overbaking.
- Let the bread cool in the pan for 10 minutes before transferring it to a wire rack to cool completely: This will help to prevent the bread from falling apart.
