Time 15m

Yield 2 servings

Number Of Ingredients 14

2 (7-ounce) portions yellowtail snapper fillets, rinsed
Pinch salt and freshly ground black pepper
1 cup all-purpose flour
1 tablespoon olive oil
2 tablespoons dry white wine
Passion Fruit Beurre Blanc, recipe follows
2 teaspoons toasted sweetened coconut
6 slices mango
1 small shallot, minced
1 teaspoon olive oil
1/4 cup dry white wine
4 passion fruit (or 1/2 cup passion fruit juice)
1/4 cup softened unsalted butter
Pinch salt and freshly ground white pepper

Steps:

  • Season the yellowtail fillets with salt and pepper, then dust 1 side only with flour, shaking off any excess. In a medium-sized saute pan, heat the olive oil until just nearly smoking and add the yellowtail, flour side down. Sear the fish until golden brown, then flip over and continue cooking 1 minute. Add the white wine and cook 1 minute more. Remove from heat. Serve fillets in a pool of Passion Fruit Beurre Blanc. Garnish the top of each fillet with 1 teaspoon of toasted coconut and 3 slices of mango.
  • In a small saucepan, saute the shallot in olive oil until slightly browned. Add the white wine and passion fruit. Over medium heat, reduce by 3/4. The liquid in the pan will begin to look thick and bubbly. Remove the pan from the heat and slowly whisk in the butter a little bit at a time, making sure all butter is whisked in before adding more. Season with salt and white pepper, to taste, then drain through a sieve and reserve the liquid in a warm part of the kitchen until needed.

BLUE HEAVEN SCALLOPS

Blue Heaven Scallops image

I found this recipe online, the Blue Heaven is a fantastic Key West restaurant that I used to frequent, eat outside with roosters running around you, a great tire swing in the yard...it's a kind of eclectic (young hippy-like) restaurant with award winning gourmet chefs.

Categories     No Shell Fish

Time 8m

Yield 2 serving(s)

Number Of Ingredients 8

1 lb scallops
1 teaspoon garlic, minced
1/2 tomatoes, diced
1/2 sweet onion, chopped
1/4 lb mushroom, sliced
1 teaspoon capers
1/4 cup white wine or 1/4 cup chicken broth
butter, slices

Steps:

  • This is an edited version of the original, but oh so yum! I used some Swanson's fat free broth vs. wine, mainly because it's what I had, and I added the capers because I like them!
  • The trick is to use a VERY HOT pan to sear the scallops. I used the large sea scallops and I sprayed the pan with cooking spray first. Then you quickly add the garlic. When done quickly, it browns the scallops slightly and thus you get a brownish sauce to go along.
  • Add the tomatoes, onion, mushrooms, capers which will cool down the pan so the scallops and garlic stop cooking.
  • Cook for just a minute, add the wine or broth, stir it up to get the scrapings into the sauce (like clarifying?) and simmer for a minute or two.
  • Remove from heat and add the butter slice, swirl it to finish the sauce.
  • This is some good stuff fit for a very special occasion. I served with shrimp scampi, asparagus with hollandaise, and garlic bread which was a great way to enjoy all those flavors as dipping sauces.

Tips:

  • Choose fresh yellowtail snapper: When selecting the fish, make sure its scales are shiny and iridescent, its eyes are clear and bright, and its gills are reddish-pink.
  • Properly clean and prep the fish: Before cooking, scale, gut, and rinse the fish thoroughly. Make sure to remove the gills and any bloodline along the backbone.
  • Use high-quality ingredients: The quality of your ingredients will greatly impact the final dish. Use fresh herbs, spices, and citrus fruits for the marinade and sauce.
  • Marinate the fish: Marinating the yellowtail snapper in a mixture of citrus juices, herbs, and spices enhances its flavor and keeps it moist during cooking.
  • Cook the fish correctly: Yellowtail snapper can be cooked using various methods such as grilling, baking, or pan-frying. Ensure that the fish is cooked through but not overcooked, as it can quickly become dry.
  • Serve with complementary sides: Accompany the grilled yellowtail snapper with dishes that complement its flavor profile, such as grilled vegetables, rice, or a fresh salad.

Conclusion:

By following these tips and techniques, you can create a mouthwatering grilled yellowtail snapper dish that will impress your family and friends. This versatile fish offers endless possibilities for experimentation, whether you prefer a simple preparation or a more complex marinade. With its delicate flavor and firm texture, grilled yellowtail snapper is a seafood delicacy that can be enjoyed for lunch, dinner, or as a special treat. So, fire up your grill, gather your ingredients, and prepare to indulge in this culinary delight!
