Tips:

  • Choose the right cornmeal: Blue cornmeal is the key ingredient in these muffins, so be sure to use a high-quality brand. Look for cornmeal that is finely ground and has a slightly nutty flavor.
  • Use buttermilk: Buttermilk helps to make these muffins light and fluffy. If you don't have buttermilk on hand, you can make your own by adding 1 tablespoon of lemon juice or vinegar to 1 cup of regular milk. Let it sit for 5 minutes before using.
  • Don't overmix the batter: Overmixing the batter will make the muffins tough. Mix just until the ingredients are combined.
  • Bake the muffins at a high temperature: This will help them to rise quickly and develop a crispy crust.
  • Let the muffins cool before serving: This will help them to set and firm up.

Conclusion:

These Blue Cornmeal Muffins are a delicious and easy-to-make breakfast or snack. They are perfect for using up leftover cornmeal, and they can be dressed up or down depending on your taste. Serve them with butter and honey, or top them with your favorite fruit or nuts.
