Categories     Side Dish

Time 35m

Number Of Ingredients 9

3/4 cup butter (at room temperature)
1 cup sugar
3 extra large eggs
1.5 cups milk
10 oz all purpose flour, by weight ((2 cups, measured))
5 oz blue cornmeal, by weight ((1 cup, measured))
4.5 tsp baking powder
1 tsp sea salt
1 cup corn kernels (optional)

Steps:

  • Preheat oven to 400 degrees F.
  • In a stand mixer fitted with the paddle attachment (or with a hand mixer/by hand), cream the butter and sugar.
  • Next, whisk the eggs and milk in a bowl until blended. In another bowl, sift together the flour, blue cornmeal, baking powder, and salt.
  • Add 1/3 of the flour mixture to the creamed butter and sugar with the mixer on low speed, then 1/2 the egg/milk mixture, then 1/3 of the flour mixture, the last half of the egg/milk mixture, then the rest of the flour mixture, waiting until each installment is absorbed before adding the next. If adding the corn kernels, stir them in with a spatula just before the last installment of flour is incorporated.
  • Pour the cornbread batter into a butter greased 13 x 9 x 2inch baking dish. Bake for 22-25 minutes, until a toothpick inserted into the center comes out clean. Cut your cornbread into squares, and drizzle honey or spread butter onto your cornbread when ready to serve.

Time 1h15m

Yield 6 to 8 servings

Number Of Ingredients 11

Nonstick cooking spray
187 grams (6 2/3 ounces) all-purpose flour
1 teaspoon baking powder
1 teaspoon baking soda
3/4 teaspoon salt
94 grams (3 1/4 ounces) coarse blue cornmeal
283 grams (10 ounces) zucchini
100 grams (3 1/2 ounces) unsalted butter
100 grams (3 1/2 ounces) sugar
2 eggs
121 grams (4 1/4 ounces) buttermilk

Steps:

  • Preheat the oven to 350 degrees F. Spray a 9-by-5-inch loaf pan with nonstick cooking spray and line with parchment paper.
  • Sift the flour, baking powder, baking soda and salt into a medium bowl. Add the cornmeal to the dry mix, and whisk together.
  • In a separate bowl, use a cheese grater to shred the zucchini.
  • In a large bowl, microwave the butter until melted. Whisk in the sugar, eggs and buttermilk (in that order), until evenly mixed. Use a rubber spatula to fold in the zucchini.
  • Sift the dry ingredients into the wet ingredients. Some larger pieces of cornmeal won't fit through the sifter; add those larger pieces after sifting, and fold into the batter.
  • Pour the batter in the prepared pan and bake until a bamboo skewer inserted in the center comes out clean, about 30 minutes.
  • Cool the bread for about 15 minutes, then turn out of the loaf pan and set on a wire cooling rack to avoid a soggy bottom. Cool the bread completely, then cut and serve.

Blue corn was a staple for the Pueblo Indians of Northern New Mexico. The blue-purple kernels produce a coarser consistency and sweeter, nuttier taste than yellow or white corn. This bread rises high and proud. This recipe was printed on the package of blue-corn meal I recently purchased.

COYOTES BLUE (OR YELLOW) CORNMEAL BREAD

Coyotes Blue (Or Yellow) Cornmeal Bread image

This sweet, and very moist cornbread is served at Coyotes Deli & Grill in Banff and the recipe was printed in Bon Appétit (Nov. 2001). Pine nuts add a surprisingly delicious element. The blue cornmeal makes for a beautiful presentation but it tastes just as delicious with yellow. Toast pinenuts on a cookie sheet at 350°F for 5 minutes. Best served warm. Leftovers, if you have any, make an awesome twist on French toast.

Tips:

  • Use fresh ingredients: Fresh cornmeal, buttermilk, and eggs will give your bread the best flavor and texture.
  • Grind your own cornmeal if possible: Freshly ground cornmeal has a more robust flavor than store-bought cornmeal.
  • Don't overmix the batter: Overmixing the batter will make the bread tough.
  • Let the batter rest before baking: This will allow the cornmeal to absorb the liquid and produce a more tender loaf of bread.
  • Bake the bread at a high temperature: This will create a crispy crust and a moist interior.
  • Cool the bread completely before slicing: Slicing the bread too soon will make it crumbly.

Conclusion:

Blue cornmeal bread is a delicious and versatile bread that can be enjoyed in various ways. Whether you're looking for a hearty breakfast bread, a side dish for your next meal, or a unique snack, blue cornmeal bread is sure to please. So next time you're looking for a new bread recipe to try, give blue cornmeal bread a try. You won't be disappointed!
