Yield Makes about 36

Number Of Ingredients 6

1 8-ounce French bread baguette, cut into 1/3 -inch-thick slices
1/4 cup (1/2 stick) butter, melted
4 ounces blue cheese, room temperature
1/4 cup (1/2 stick) butter, room temperature
1/2 cup finely chopped walnuts
Chopped fresh parsley (optional)

Steps:

  • Preheat oven to 400°F. Brush 1 side of baguette slices with melted butter. Place slices on baking sheet and bake until just golden brown on edges, about 7 minutes. Cool slightly.(Can be prepared 2 days ahead; store in airtight container.)
  • Preheat oven to 400°F. Combine blue cheese and butter in small bowl. Season generously with pepper. Spread toasted baguette slices with cheese mixture. Sprinkle cheese mixture with walnuts. Place toasts on baking sheet and bake until cheese mixture is bubbly, about 6 minutes. Sprinkle with parsley if desired and serve.

Tips:

  • For the best flavor, use a high-quality blue cheese that is both sharp and creamy. A few good options include Roquefort, Gorgonzola, and Stilton.
  • If you don't have a baguette, you can use any other type of crusty bread, such as a ciabatta loaf or a sourdough boule.
  • Be sure to toast the bread until it is golden brown and crispy. This will help it to stand up to the strong flavors of the blue cheese and walnuts.
  • If you are using a toaster oven, be sure to preheat it to the highest setting before toasting the bread.
  • Keep an eye on the toasts as they are toasting. They can burn quickly, so it is best to check on them frequently.
  • Once the toasts are toasted, spread them with the blue cheese mixture and top with the walnuts. Serve immediately.

Blue cheese walnut toasts are a delicious and easy-to-make appetizer that is perfect for any occasion. They are also a great way to use up leftover blue cheese.
