BLUE CHEESE PECAN WAFERS

Categories     Cheese

Number Of Ingredients 7

3/4 cup pecans, toasted and finely chopped
1 cup all-purpose flour
1/4 teaspoon salt
1/8 teaspoon ground black pepper
1/2 cup (1 stick) unsalted butter, softened
1/2 cup crumbed blue cheese (2 ounces)
Bottled hot pepper sauce

Steps:

  • In a medium bowl stir together the pecans, flour, salt and pepper. Using a wooden spoon, stir butter and blue cheese into flour mixture until mixture resembles coarse crumbs. Stir in hot pepper sauce. Shape dough into a ball; knead until smooth. Divide dough in half. On parchment or waxed paper, shape each dough half into a 7-inch long log.* Wrap in the parchment paper. Freeze for 30 minutes or until firm. Cut each log into slices, about 1/4-inch thick. Place slices about 1-inch apart on silicone baking mat (Silpat®)-lined baking sheets. Bake in a 350° F oven for 10 to 12 minutes or until edges are turning brown. Transfer to wire racks to cool. Makes about 4 dozen. * To get perfectly round and uniformly sized wafers, fold the parchment paper over the dough in half, with the seam facing you. Using a dough scraper or your hands, push the dough against the back side of the parchment paper until it is in the shape of a log. Continue pushing and shaping until the log is the desired size, and is uniformly round. MAKE-AHEAD: To store, cool wafers completely. Place in a covered container and refrigerate for up to 1 week, or freeze for up to 1 month. Thaw frozen wafers in the refrigerator before serving.

Tips:

  • To ensure crispy wafers, it's crucial to preheat your oven to the highest temperature possible. This creates a hot environment that allows the wafers to bake quickly, resulting in a golden-brown and crispy texture.
  • For a more flavorful wafer, incorporate freshly grated Parmesan cheese into the dough. Grating your own cheese provides a more intense flavor compared to using store-bought pre-grated cheese.
  • Incorporate herbs or spices to add an extra layer of flavor to your wafers. Garlic powder, Italian seasoning, or chili flakes are great options that complement the blue cheese nicely.
  • Before baking, ensure that you poke holes in the wafers with a fork. This allows steam to escape during baking, preventing the wafers from puffing up and ensuring a flat and crispy texture.
  • Keep an eye on the wafers while they're baking. The baking time may vary depending on the thickness of the wafers and the temperature of your oven. Bake until the edges are golden brown and the tops are firm.
  • For a richer flavor, consider using a high-quality blue cheese that has a strong and distinct taste. This will ensure that the blue cheese flavor shines through in the final product.
  • Be sure to allow the wafers to cool completely before serving. This will help them crisp up further and make them easier to handle.

Conclusion:

These blue cheese wafers are a delightful and versatile snack or appetizer that can be enjoyed on various occasions. By following these tips and carefully adhering to the recipe, you'll be able to create crispy, flavorful wafers that are sure to impress your friends and family. Whether served as a simple snack, paired with your favorite dip, or incorporated into a cheeseboard, these wafers are a culinary treat that offers a delightful blend of flavors and textures. Get creative and experiment with different toppings and variations to tailor them to your personal taste preferences. Enjoy these delicious blue cheese wafers as a delightful addition to your next gathering or savor them as a satisfying snack anytime you crave something savory and satisfying.
