Yield 60 Grapes

1/2 cup shelled pecans
1/2 cup shelled pistachios
1/2 cup shelled walnuts
0.75 (6 ounce) package reduced-fat cream cheese, at room temp (Neufchatel)
4 ounces blue cheese
12 ounces seedless grapes, stemmed, rinsed and dried
grape leaves or mint sprig, rinsed and dried

Tips:

  • Choose the Right Blue Cheese: Opt for a blue cheese that is flavorful but not overpowering, such as Gorgonzola Dolce or Roquefort. Avoid cheeses with a strong ammonia-like smell, as they may be too pungent for this dish.
  • Use Fresh Grapes: Fresh grapes will provide the best texture and flavor for this dish. Avoid grapes that are bruised or wrinkled.
  • Toast the Pistachios Properly: Toasting the pistachios will enhance their flavor and make them more crunchy. Keep a close eye on them while they are toasting to prevent them from burning.
  • Add a Touch of Honey: If you find the blue cheese to be too salty, you can add a small amount of honey to balance out the flavors.
  • Serve Immediately: This dish is best served immediately after it is assembled. The pistachios will lose their crunch if they sit for too long.

Conclusion:

Blue cheese, grapes, and spicy toasted pistachios come together in perfect harmony in this delightful appetizer. The creamy blue cheese pairs perfectly with the sweet grapes, while the spicy pistachios add a touch of heat and crunch. This dish is easy to make and is sure to impress your guests. Whether you are hosting a party or simply looking for a tasty snack, this blue cheese grape and pistachio appetizer is a great choice.
