3 extra-large eggs
1 1/2 teaspoons kosher salt

8 to 10 hamburger buns
8 ounces blue cheese, sliced (recommended: Danish Blue)

Steps:

  • Carefully mix the meats, bread crumbs, steak sauce, eggs, salt, and pepper with the tines of a fork, but do not mash them. Lightly form hamburger patties and press lightly into shape.

  • Combine olive oil, salt, and 1/2 teaspoon black pepper in a small bowl. Center half of the mushrooms and onion on a sheet (12x18 inches) of Reynolds Wrap® Heavy Duty Aluminum Foil. Buffalo sauce, a mixture of melted butter and hot sauce, is a big claim to food fame for Buffalo, New York. It is normally served on fried chicken wings (Buffalo wings), but this burger is a great variation of the theme. The recipe is adapted from one published in my local newspaper and credited to David Joachim, author of The Tailgater's Cookbook. It was included in a feature on tailgating, and the idea was to get these ready to grill at home, then grill them at your tailgating affair. The original recipe called for either ground buffalo or ground beef. Since ground buffalo is not available where I live, I used ground beef. I forgot to notice how long prep took, so the time given is a guess. I served these on PaulaG's Recipe #139827--they are excellent and I highly recommend them.

4 tablespoons butter, cut in small pieces
1/3 cup mild hot sauce (they mentioned Durkee, I used Frank's RedHot)
1/2 cup finely crumbled blue cheese
1 tablespoon minced garlic (you may want to use less if you're not a big fan of garlic)
2 lbs 85% lean ground beef or 2 lbs ground buffalo meat
1/2 teaspoon celery seed
1/3 cup finely chopped onion
6 hamburger buns, split

Steps:

  • Melt butter and whisk in hot sauce.
  • Mix blue cheese and garlic in a small bowl.
  • Using your hands, gently mix beef (or buffalo), celery seed, onion and 1/4 cup hot sauce mixture in a medium bowl until blended. Form into 12 patties, using a light touch; the patties should be about 4 1/2 inches in diameter and no more than 1/2 inch thick.
  • Spoon about 2 teaspoons of cheese-garlic mixture in center of 6 patties, then top with remaining patties and press together, sealing edges.
  • Cover and refrigerate until ready to grill. (Even if you aren't making these ahead of time, I think they hold together better after a little chill time).
  • Heat grill to medium and oil grate.
  • Grill burgers about 4-5 minutes on each side, or until cooked to taste. (I'll only eat ground beef cooked well, so I cooked a bit longer.) Brush with remaining hot sauce mixture during last 2 minutes of cooking. Toast buns if you like.
  • (I couldn't think of many traditional condiments I wanted on this burger, so I just ate mine with extra buffalo sauce and lettuce).

1/4 cup dry sherry
5 tablespoons olive oil

4 ounces spinach leaves (about 5 cups)

Steps:

  • 1. Lay the mushrooms on a greased baking sheet, gill sides up. Whisk together the garlic, sherry, 2 tablespoons of the oil and 2 teaspoons of the salt. Pour the mixture over the mushrooms. Marinate for at least 30 minutes or up to 2 hours.
  • 2. Preheat the oven to 400 degrees F. Divide the cheese evenly among the mushroom caps. Roast until the mushrooms are fork-tender and the cheese is melted, 15 to 20 minutes. Reserve any cooking juices in the pan.

4 brioche buns
2 tablespoons unsalted butter
1 cup raw baby spinach leaves
4 tomato slices, thick cut

Steps:

  • For the tarragon aioli: In a bowl, whisk together the mayo, garlic puree and tarragon. Taste and season with salt and white pepper as desired.
  • For the chicken burgers: Preheat the oven to 350 degrees F. Over medium-high heat, warm a large ovenproof saute pan with the oil. Form the chicken into 4 equal patties, and then form a pocket in the center of each burger. Fill the center with a quarter of the blue cheese, and then fold the edges to seal the cheese in the burgers. Sprinkle the stuffed burgers with the salt and pepper and sear in the pan for 2 to 3 minutes per side. 1 egg
3 tablespoons hot sauce (a buffalo-style sauce like Frank's RedHot)

Steps:

  • Mix together butter and blue cheese. Shape into a 2-inch diameter log and wrap in wax paper. I like to make this and keep one in the freezer packaged in a protective re-sealable bag.
  • Mix bison with scallions, salt, pepper, and thyme in a large bowl. Divide into four even pieces and roll into balls.

2 lbs lean ground turkey breast
2 -4 tablespoons grill seasoning
1/4 cup buffalo wing sauce
1/4 cup chives, plus extra chopped (to garnish)
1/4 cup parsley, chopped
2 garlic cloves, grated
2 tablespoons olive oil
3 tablespoons butter
3 tablespoons flour
3 cups milk
1 cup blue cheese
salt, to taste
fresh ground pepper, to taste
3 carrots, peeled and cut into sticks
3 stalks celery, cut into sticks
4 kaiser rolls (kimmelwick rolls) or 4 slices rye bread (thick slices)

Steps:

  • In a large bowl, mix the turkey, grill seasoning, hot sauce, chives, parsley and garlic. Form six patties.
  • Heat a large skillet over medium-high heat with two tablespoons olive oil, two turns around the pan. Sauté the burgers about five minutes on each side, until cooked through.
  • In a medium skillet over medium-high heat, melt the butter. Sprinkle the flour over the butter and cook it for about 1 minute. Whisk the milk into the roux and season with salt and freshly ground black pepper. When the milk comes up to a bubble and has thickened, take the pan off the heat and stir the blue cheese into the sauce in a figure-eight motion.
  • To serve, place the top of the roll or a slice of rye bread on a plate, top with the burger. Serve with celery and carrot sticks and a cup of warm, blue cheese dip garnished with some chopped chives alongside. You can also drizzle some buffalo sauce over the top.

1 lb ground beef (I usually purchase 80-20 or 85-15 since most of the fat cooks out on the Foreman grill)
2 teaspoons extra virgin olive oil
2 teaspoons Worcestershire sauce
1/4 teaspoon fresh ground pepper
1/4 teaspoon salt
3 ounces crumbled blue cheese (to go inside burger)
2 ounces crumbled blue cheese (for topping) (optional)
hamburger bun

Steps:

  • In a large bowl, mix all ingredients except blue cheese. Make sure salt and pepper are distributed evenly throughout the mixture.
  • Divide beef mixture into 4 sections (these will eventually become 4 burgers).
  • Take approximately 2/3rds of a single section, form into a burger shape, and use your thumb to form a deep imprint in the middle.
  • Fill imprint with 1/4 of the blue cheese.
  • Take the remaining 1/3rd of the beef mixture from that section and cover the blue-cheese filled imprint in the burger, flattening around the edges to ensure that the ground beef stays together and the blue cheese does not leak out.
  • Repeat and then grill burgers to desired doneness.
  • Place grilled burger on bun and top with more crumbled blue cheese if desired.
  • Watch out when you bite into the burger - the blue cheese will be hot!

My husband and I had burgers at a restaurant once that had blue cheese and bacon. It was so good, so I attempted to make our own. After lots of trial and error, I've got the recipe down. I typically make the burgers and freeze them for future use. The blue-cheese butter freezes well too for steaks or other uses.

1 (8 ounce) package of crumbled blue cheese
1/2 cup butter, softened
1 1/2 lbs ground beef (the 75/25 or 85/15 works best...but you can use a leaner meat since there's so much butter in the re)
1 egg, mixed
1/4 cup breadcrumbs, unseasoned
1/4 cup fresh parsley, fresh chopped (you can also add some chives)
salt, to taste
pepper, to taste
1 lb bacon, get a good thick deli sliced one or 1 lb pepper bacon

Steps:

  • Mix together the softened butter and blue cheese until well mixed. Roll into a log about 2-3 inches in diameter and wrap in Parchment paper. Refrigerate until hardened. You can also freeze if you don't plan to use for a while.
  • Once the butter is hardened, mix together the remaining ingredients in a large bowl by hand. Form the meat into 4-6 balls (depending on how big you want your burgers).
  • Slice 1/2 inch slices from hardened blue cheese/butter log. Place each butter/blue cheese circle into the middle of the burger ball and press into middle, shaping into a thick burger shape. Repeat for all remaining burgers. Ensure that butter/blue cheese is sealed into the middle of the meat. Grill burgers until desired doneness.
  • Cook bacon as usual on stove or oven. If you have non-peppered bacon, add a generous amount of pepper before cooking.
  • Serve burgers on your favorite bun with bacon. Add your favorite toppings -- fresh tomatoes, lettuce, extra blue cheese, ketchup, mustard, extra blue cheese, etc.
  • These are awesome! I love to make them huge -- 1/3 to 1/2 pounders and serve without a bun and have a salad as a side dish. They are so yummy!
