Categories     Cheese Appetizers

Time 25m

Number Of Ingredients 5

1 1/2 c crumbled blue cheese (such as roquefort, gorgonzola, or danish blue)
3/4 c unsalted butter, room temperature
1/4 tsp tabasco
1 Tbsp onion, minced
1 c toasted almonds, finely chopped

Steps:

  • 1. Mash the blue cheese with a fork until smooth.
  • 2. Add the butter, Tabasco, and onion. Blend well.
  • 3. Form into walnut-sized balls.
  • 4. Roll the balls in the chopped almonds.
  • 5. The cheese mixture will be a bit soft and sticky, but you should be able to perfect the shape of the balls once they have almonds on them.
  • 6. Mound the balls in a pretty bowl, cover, and chill.
  • 7. Serve on a cheese board with crackers or bread and sliced cherry tomatoes or radishes.

Tips:

  • Choose the right cheese: Use a high-quality blue cheese that has a strong flavor. Some good options include Roquefort, Stilton, or Gorgonzola.
  • Soften the cheese: Let the cheese come to room temperature before using it. This will make it easier to mix and spread.
  • Use fresh herbs: Fresh herbs, such as chives, parsley, or thyme, will add a bright flavor to the cheese balls.
  • Don't overmix the ingredients: Overmixing the ingredients will make the cheese balls tough. Mix just until the ingredients are combined.
  • Chill the cheese balls before serving: Chilling the cheese balls for at least 30 minutes before serving will help them to firm up and hold their shape.
  • Serve with crackers or bread: Cheese balls are traditionally served with crackers or bread. You can also serve them with vegetables, such as celery or carrots.

Conclusion:

Blue cheese balls are a delicious and easy-to-make appetizer that are perfect for any occasion. They are also a great way to use up leftover blue cheese. With a few simple ingredients and a little bit of time, you can make a tasty snack or appetizer that your friends and family will love.
