- Slice jalapeño peppers in half lengthwise and core out the innards.
- Cook the bacon in a pan over medium heat until the fat renders and the bacon becomes nice and crispy, about 8-10 minutes. Drain the bacon on paper towels and let them cool. Crumble them into a mixing bowl.
- Add the cream cheese, Stella® Blue Cheese and garlic powder to the mixing bowl. Mix until well combined.

- Shape beef into 8 thin patties. Combine the cream cheese, blue cheese and bacon bits; spoon onto the center of 4 patties. Top with remaining patties and press edges firmly to seal. - Slice tops off peppers, set aside. Remove seeds from peppers & set aside.
- Combine all other ingredients in a large bowl. Get in there with your hands and mix till evenly distributed.
- Fill peppers to top with the meat mixture. Place tops of peppers back on. Wrap each pepper with aluminum foil.
- To cook peppers you can either place the wrapped peppers on a hot grill for approximately 30 minutes, turning every few minutes or so till done; OR, and this is my preferred way, you can place the wrapped peppers directly on the coals in the grill or the campfire for about 15-20 minutes, turning (carefully) every couple minutes. Take a thermometer to the middle of the meat to ensure a temperature of at least 160 degrees F.
- Remove peppers from grill/coals. Let sit wrapped for about 10 minutes, then unwrap & enjoy! Serve with some more steak sauce & pickle spears.
