10 large jalapeño peppers (or as many as you can fill)
6 ounces bacon
8 ounces cream cheese (softened)
10 ounces Stella® Blue Cheese
1 teaspoon garlic powder
FOR SERVING: fresh chopped cilantro, spicy chili flakes

Steps:

  • Slice jalapeño peppers in half lengthwise and core out the innards.
  • Cook the bacon in a pan over medium heat until the fat renders and the bacon becomes nice and crispy, about 8-10 minutes. Drain the bacon on paper towels and let them cool. Crumble them into a mixing bowl.
  • Add the cream cheese, Stella® Blue Cheese and garlic powder to the mixing bowl. Mix until well combined.
  • Fill each jalapeño slice with the bacon-blue cheese mixture and set them onto a baking sheet.
  • Bake at 350 degrees F. for 20 minutes or until the cheese is nicely melty.

3 ounces cream cheese, softened
1/3 cup crumbled blue cheese
1/3 cup bacon bits
1/2 teaspoon salt
1/2 teaspoon garlic powder
1/4 teaspoon pepper
1 pound sliced fresh mushrooms
1 tablespoon olive oil
1 tablespoon water
1 tablespoon Dijon mustard
4 whole wheat hamburger buns, split
1/4 cup mayonnaise
4 romaine leaves
1 medium tomato, sliced

Steps:

  • Shape beef into 8 thin patties. Combine the cream cheese, blue cheese and bacon bits; spoon onto the center of 4 patties. Top with remaining patties and press edges firmly to seal. Combine the salt, garlic powder and pepper; sprinkle over patties., Grill burgers, covered, over medium heat or broil 4 in. from the heat on each side until a thermometer reads 160° and juices run clear, 5-7 minutes. , Meanwhile, in a large skillet, saute mushrooms in oil until tender. Do you love burgers? Do you love stuffed peppers? Here's a great way to combine your two loves! These are perfect for a camping trip!

2 pound(s) ground beef or turkey
1 package(s) cooked & crumbled bacon
1 cup(s) blue cheese, crumbled
1 tablespoon(s) onion flakes, dehydrated
1 teaspoon(s) black pepper
1/2 teaspoon(s) sea salt
1/2 teaspoon(s) garlic powder
1/2 cup(s) italian bread crumbs (gluten-free)
1/2 cup(s) instant potato flakes, dry
1 cup(s) cooked rice
1/3 cup(s) steak sauce
1 tablespoon(s) prepared mustard
1 - egg
6-8 - large bell peppers

Steps:

  • Slice tops off peppers, set aside. Remove seeds from peppers & set aside.
  • Combine all other ingredients in a large bowl. Get in there with your hands and mix till evenly distributed.
  • Fill peppers to top with the meat mixture. Place tops of peppers back on. Wrap each pepper with aluminum foil.
  • To cook peppers you can either place the wrapped peppers on a hot grill for approximately 30 minutes, turning every few minutes or so till done; OR, and this is my preferred way, you can place the wrapped peppers directly on the coals in the grill or the campfire for about 15-20 minutes, turning (carefully) every couple minutes. Take a thermometer to the middle of the meat to ensure a temperature of at least 160 degrees F.
  • Remove peppers from grill/coals. Let sit wrapped for about 10 minutes, then unwrap & enjoy! Serve with some more steak sauce & pickle spears.
