Categories     main-dish

Time 20m

Yield 4 servings

Number Of Ingredients 15

1 pound refrigerated or frozen pizza crust or bread dough, thawed according to package directions if frozen
1 cup prepared barbecue sauce
1/2 cup thinly sliced red onions
8 cooked shrimp, cut into 1/2-inch pieces
4 slices turkey bacon, cooked until crisp and crumbled
1/2 cup sliced black olives
1/2 cup shredded Monterey Jack cheese
1/2 cup shredded mozzarella cheese
3 tablespoons cider vinegar
2 tablespoons olive oil
1 teaspoon Dijon mustard
1/2 cup raisins
1/4 cup crumbled blue cheese
Salt and freshly ground black pepper
1 packaged coleslaw mix

Steps:

  • Preheat oven to 450 degrees F. Roll pizza crust into a large rectangle, about 14 by 10 inches.
  • Top pizza with barbecue sauce, to within 1/2-inch of the edges. Top with onions, shrimp, bacon, olives, and both cheeses. Bake 10 to 12 minutes, until cheese melts and crust is golden brown.
  • Meanwhile, in a small bowl, whisk together the cider vinegar, olive oil and Dijon mustard. Stir in the raisins and the crumbled blue cheese. Season with salt and pepper and toss with the packaged coleslaw mix in a large bowl. Serve with pizza.

Tips:

  • Choose the right cabbage: For the best coleslaw, use a firm head of green or red cabbage. Avoid using savoy cabbage, as it has a softer texture and will not hold up as well.
  • Shred the cabbage thinly: This will help the dressing to coat the cabbage evenly and make the coleslaw more flavorful.
  • Use a sharp knife or mandoline: This will make shredding the cabbage easier and help to create even, thin strips.
  • Add other vegetables: In addition to cabbage, you can also add other vegetables to your coleslaw, such as carrots, celery, or radishes.
  • Make your own dressing: The dressing is what really makes coleslaw special. You can use a store-bought dressing, but it is easy to make your own. Simply whisk together mayonnaise, vinegar, sugar, and salt and pepper to taste.
  • Let the coleslaw chill: After you have made the coleslaw, let it chill in the refrigerator for at least 30 minutes before serving. This will allow the flavors to meld and the dressing to thicken.

Conclusion:

Coleslaw is a delicious and versatile side dish that can be enjoyed at any time of year. With so many different variations, there is sure to be a coleslaw recipe that everyone will love. So next time you are looking for a quick and easy side dish, give coleslaw a try. You won't be disappointed!
