- Preheat oven to 375 degrees F (190 degrees C). Line a baking dish with aluminum foil.
- Cut top 1/3 off garlic heads, exposing the cloves. Place garlic in the prepared baking dish cut side up. Pour olive oil over the garlic and season with salt. Fold up foil and seal to create a tight packet.
- Bake in the preheated oven until a paring knife inserts easily into the center of a garlic clove, about 1 hour; set aside to cool. Once cool, remove each garlic clove from the skin. Reserve remaining olive oil.
- Increase oven temperature to 400 degrees F (200 degrees C).
- Bring a large pot of salted water to a boil; add green beans and cook until bright green and nearly tender, 4 to 6 minutes. Drain beans and transfer to a large bowl of ice water to cool completely; drain well and set aside.
- Melt butter in a large skillet over medium heat. Add almonds; cook and stir until lightly browned, 3 to 4 minutes.
- Toss green beans, roasted garlic and reserved olive oil, toasted almonds, and 1 tablespoon olive oil together in a large bowl; season with cayenne pepper, salt, and black pepper. Transfer to a shallow baking dish and top with blue cheese.7

- Preheat the grill. In a bowl, mix the meat. Form 4 (3-ounce patties) by using a scoop. Push them down and make little indentations in the middle to hold the flavors. Place a teaspoon of garlic paste in the middle of each patty and add a little chunk of blue cheese tucked right on top of the garlic paste. Add a good twist of black pepper. Take another 3 ounce scoop of meat, make it flat in your hand and place right on top of the other half.
- Take your fingers and just seal the 2 patties up and refrigerate until you are ready to grill.
- Meanwhile: Split the pieces of bread, and pull out some of the soft center to make a hole for the burger. Place the bread face down on the grill to toast.
- Place the burger in the bread, and top with your favorite condiments.
- Preheat the oven to 375 degrees F.
- Heat an ovenproof saucepan on the stovetop. When it's hot, add the extra-virgin olive oil. Next, add the cloves and season with salt and pepper. Let the cloves begin to caramelize, then put the pan in the preheated oven.
- Roast cloves in the oven for about 30 minutes or until they are nicely browned. (Starting the garlic on the stove will save at least 20 minutes of roasting time). Let cool.
- When cool enough to handle easily, put the roasted garlic into a small bowl, mash with a fork and add oil from the pan until a paste forms. Store, tightly covered, in the refrigerator, for up to 1 week.

- Preheat oven to 375°F.
- Remove all but a couple of layers of skin off the garlic (do not peel it down to the cloves).
- Slice the tips of the cloves so flesh is just exposed.
- Place garlic in a small baking dish (or a garlic roaster, if you have one).
- Place a few sliced scallions around the garlic bulbs.
- Coat garlic bulbs with olive oil with a thin layer of olive oil in the bottom of the dish.
- Bake for about 45 minutes or until cloves are soft.
- About 10 minutes before the garlic is done, place crumbled blue cheese around garlic cloves.
- Stir around to coat with oil.
- Return to oven and bake until melted.
- Let stand 5 minutes before serving.
- To eat, spread a bread slice with the blue cheese, squeeze on roasted garlic and spread.

BLUE CHEESE AND ROASTED GARLIC DIP/SPREAD
This is the most amazing dip that is also wonderful spread on grilled steaks and burgers and also wonderful served on the side with raw veggies --- fresh garlic may be used, but be cautious only to use a small amount 1 teaspoon minced or less of fresh will do fine as it will overpower the other ingredients, I use about 1 tablespoon roasted for this, start by adding in a small amount at a time, and increase the amount of roasted garlic (fresh or roasted) as this dip gets stronger when left left to chill for the full 24 hours, so you might want to start with a small amount of garlic and add in more the following day if desired --- this is a dip I created years ago and still serve it today at get togethers it is the first to completey go so I always make a double batch --- gorgonzola cheese can be replaced with blue cheese for a milder flavor --- plan ahead this dip needs to chill 8-24 hours before using, you may adjust all ingredients to taste, if you prefer a more creamy dip increase the sour cream slightly, but start with the stated amounts, you will love this dip! :)
