GRANDMA'S COLLARD GREENS

Grandma's Collard Greens image

These are without a doubt, the best collard greens I have ever eaten (and I have had my share). My grandma used to make this recipe in the summer when her collards in the garden were ready. If you don't like these, you don't like collard greens ... guaranteed!! Add more red pepper flakes if you like it spicy.

Tips:

  • Choose fresh, tender collard greens. Look for leaves that are deep green and free of blemishes.
  • Wash the collard greens thoroughly. Rinse them well under cold water to remove any dirt or grit.
  • Remove the tough stems from the collard greens. Fold each leaf in half lengthwise and use a sharp knife to cut out the stem.
  • Chop the collard greens into bite-sized pieces. This will help them cook evenly.
  • Use a large pot or Dutch oven to cook the collard greens. This will give them plenty of room to wilt and cook evenly.
  • Add a flavorful cooking liquid to the collard greens. This could be water, broth, or even coconut milk.
  • Season the collard greens with your favorite spices and herbs. Some popular options include garlic, onion, salt, pepper, and red pepper flakes.
  • Cook the collard greens until they are tender but still have a little bit of a bite to them. This will usually take about 30 minutes.
  • Serve the collard greens hot with your favorite sides. They go well with cornbread, fried chicken, or mashed potatoes.
