1/4 teaspoon plus 1/8 teaspoon celery salt, divided
1-1/2 to 2 cups ice cubes, divided
2 ounces vodka
1 cup tomato juice, chilled
1 tablespoon lemon juice
1-1/2 teaspoons lime juice
3/4 teaspoon Worcestershire sauce
1/2 teaspoon prepared horseradish, optional
1/8 teaspoon pepper
1/8 teaspoon hot pepper sauce
OPTIONAL GARNISHES:
Celery rib, pickle spear, green and ripe olives, cucumber slice and/or cocktail shrimp

Steps:

  • Using water, moisten rim of a highball glass. Sprinkle 1/4 teaspoon celery salt on a small plate; dip rim into salt. Discard remaining celery salt from plate. Fill a shaker three-fourths full with ice. Place remaining ice in prepared glass. , Add vodka, juices, Worcestershire sauce, horseradish if desired, pepper, remaining celery salt and pepper sauce to shaker; cover and shake until condensation forms on exterior, 10-15 seconds. Strain into prepared glass. Garnish as desired.

4 cups tomato juice
Juice of 2 large lemons
1 to 2 tablespoons Worcestershire sauce
1 heaping tablespoon prepared horseradish
1 1/2 cloves garlic, passed through a garlic press
2 teaspoons coarsely ground pepper
1/4 to 1/2 teaspoon Tabasco sauce
Unflavored vodka, to taste
Lemon wedges, for serving
Celery sticks, for serving and munching

Steps:

  • Place tomato juice in a large container with a tight-fitting lid. Add lemon juice, Worcestershire sauce, horseradish, garlic, pepper, and Tabasco; shake vigorously. Taste, and adjust for seasoning; the mixture should be quite spicy.
  • Pour 1 part vodka and 3 parts Bloody Mary mix over ice in a shaker. Shake well. Pour into glasses. Squeeze a wedge of lemon over drink (do not subsequently stir or shake drink), discard used wedge. Garnish with a large stick of celery (reserve extra stalks for munching) and a large lemon wedge.

The pale green sticks look like celery, they crunch like celery, but they taste like apples. This version uses gin and spicy tomato water to turn the celery into crisp and juicy bloody Marys.

3 pounds very ripe tomatoes, coarsely chopped
1/2 teaspoon, plus pinch kosher salt
3 celery stalks
8 ounces gin
12 dashes Tabasco
12 dashes Worcestershire sauce

Steps:

  • Line a colander with a thin dish towel or double layer of cheesecloth and place over a bowl. Put tomatoes in the colander and toss with 1/2 teaspoon salt, mashing tomatoes gently with your hands. Let tomatoes drip for 2 hours or refrigerate up to 8 hours. Give the tomato bundle a squeeze, then pour strained liquid into a measuring cup (you should have about 2 cups). Chill tomato water thoroughly before using (at least 2 hours or up to 2 days).
  • Snap off the very end of a celery stalk with your fingers and pull down the length of the stalk, pulling away strings as you go. Repeat until most of the strings have been removed. This will help the celery absorb more liquid. Slice each stalk in half lengthwise, then slice each piece crosswise.
  • Combine the tomato water, gin, Tabasco, Worcestershire, a pinch of salt and celery stalks in the bottom of a whipped-cream maker. Charge with two cartridges of nitrous oxide. Release the pressure. Put a sieve over a bowl; empty the contents over the sieve. Transfer the celery sticks to a plate and serve.

I make up a jar of these when I'm serving Bloody Marys to a few people, and sometimes I make a jar of them up just for my husband and myself. We can snack on these spicy, garlicky babies even without the cocktails! Cook time listed is chill time. These can be made in a bowl as well, see note.

2 cups white vinegar
1/2 cup sugar
1 1/2 tablespoons salt
6 -8 garlic cloves, smashed
1 tablespoon mustard seeds
2 teaspoons red chili pepper flakes
1 tablespoon cracked peppercorn
10 -14 celery ribs, peeled and cut into lengths

Steps:

  • Cut celery stalks into lengths to stand up in quart wide mouth jar with a little wiggle room and just enough head room to pour in the brine and place on the lid.
  • Bring all ingredients except celery to a boil just so sugar and salt dissolve.
  • Remove from heat and pour over celery. Push down and adjust seeds and garlic cloves. Cool for a few minutes, place on the lid, and cool all the way, then refrigerate until completely chilled, 2 or 3 hours. They are now ready to serve in Bloody Marys or on a relish tray.
  • NOTE: You can also cut these in lengths to fit a pint jar, or submerged in a bowl, weighing them down with a small plate. In this case, cut the ingredients in half.
