BLOOD ORANGE CREAMSICLE GELATO

Number Of Ingredients 6

Zest of one blood orange (or use an orange if blood oranges are not available)
1 cup whole milk
1 cup sugar, divided into ½ cup portions
2 cups heavy cream, divided into 1 cup portions
6 egg yolks
½ quart freshly squeezed blood orange juice (Will get 2 cups of reduced blood orange syrup)

Steps:

  • Make your blood orange syrup, in a saucepan, add 4 cups of freshly squeezed blood orange juice and ½ cup of sugar. Cook until reduced by half and the juice is syrupy (about 30-40 minutes). Remove from the heat and let it cool completely. Put it into the refrigerator until later. (I used freshly squeezed juice from my local market but you can buy blood oranges and juice them yourself. You will need about 8 to get 4 cups of blood orange juice).
  • Combine the zest, 1 cup of cream and milk to a heavy bottomed saucepot and heat on medium high heat. Bring the mixture to a low boil. Put the lid on the pot and take it off the heat. Let the zest infuse into the cream for 30 minutes.
  • Re-heat the cream and zest mixture. In a separate bowl, whisk together the egg yolks and the sugar until they are pale yellow. Using a ladle, add one ladle of hot cream mixture into the egg yolk mixture and whisk (this will bring up the heat of the eggs without cooking them). Scrape the warmed egg mixture into the saucepan and continue to stir until the mixture thickens and coats the back of a wooden spoon.
  • Have an ice-water bath ready. Remove saucepan from heat and immediately stir in remaining heavy cream. Pass mixture through a sieve set over a medium bowl. Place bowl in ice-water bath and bring the mixture to at least room temperature and refrigerate until very cold (at least 5 hours).
  • Add the cold blood orange syrup to the custard and stir until fully incorporated. Follow your ice cream maker's instructions to churn and freeze your ice cream. Put it into a freezer safe container to have it fully set (about 3 hours). Homemade gelato is best served fresh. This gelato will keep for about 2-3 days in an airtight container in the freezer.

1/8 teaspoon fine salt
6 large eggs yolks
1 1/2 cups heavy cream
1/2 cup whole milk
1/4 cup buttermilk
1 orange, zested, orange reserved
Zest of 1 lemon
Zest of 1 lime
1 tablespoon white rum or vodka

Steps:

  • Whisk the sugar, salt and yolks in a heavy medium stainless steel or enamel saucepan. Gradually whisk in the cream. Then whisk in the milk, buttermilk and citrus zests. Using a wooden spoon, stir the custard constantly over medium heat until it thickens enough to coat the back of the spoon and a thermometer registers between 180 and 185 degrees F, 8 to 10 minutes.
  • Immediately scrape the custard into a 4-cup measuring cup; mix in the rum. Refrigerate uncovered until cold, about 3 hours, stirring occasionally to prevent a skin from forming. Cover until ready to freeze (can be made 1 day in advance).
  • Freeze the custard in an ice cream machine according to manufacturer's instructions.
  • While the custard is freezing in the ice cream machine, peel and trim the ends from the zested orange. Using a paring knife, cut along the membrane on both sides of each segment. Free the segments onto a cutting board. Cut the segments into 1/2-inch pieces. During the last 10 minutes of freezing time, add the orange segments.
  • Transfer to a container; cover and freeze until ready to serve.

FILLING:
10 medium blood oranges
3/4 cup crumbled goat cheese
3 ounces cream cheese, softened
1/3 cup sour cream
1/4 cup honey
2 large egg yolks, divided use
1/4 teaspoon salt
3 tablespoons coarse sugar, divided
1 tablespoon butter
1 tablespoon water
SAUCE:
1/4 cup butter, cubed
1/2 cup packed brown sugar
2 tablespoons half-and-half cream
2 tablespoons honey
1/2 teaspoon ground cinnamon

  • In a large bowl, mix flour, sugar and salt; cut in butter until crumbly. Stir in oats. Gradually add ice water, tossing with a fork until dough holds together when pressed. 2 cups whole milk
Zest of 1 blood orange, plus 1 cup freshly squeezed blood-orange juice (about 4 oranges)
5 large egg yolks
3/4 cup sugar
1 cup heavy cream

Steps:

  • In a medium saucepan, combine milk and orange zest. Bring to a gentle boil, cover, and remove pan from heat. Let steep 30 minutes.
  • In a small saucepan, cook orange juice over medium-low heat until reduced by three-fourths, 30 to 40 minutes. Remove pan from heat, and let orange syrup cool completely.
  • Combine egg yolks and sugar in the bowl of an electric mixer fitted with the paddle attachment. Cream at medium-high speed until very thick and pale yellow, 3 to 5 minutes. Return milk to a simmer.
  • Add half of warm milk to egg-yolk mixture; whisk until blended. Return new mixture to saucepan. Cook over low heat, stirring constantly, until thick enough to coat back of a wooden spoon.

3 navel oranges
1 cup water
3/4 cup sugar
6 large egg yolks
1 cup heavy cream

Steps:

  • Finely grate the zest from the oranges and squeeze the juice. There should be about 3 tablespoons zest and 2/3 cup juice.
  • In a medium saucepan, combine the water and the sugar. Cook over medium heat, stirring, until the sugar dissolves, about 3 minutes. Remove from the heat.
  • In a large bowl, whisk the egg yolks until very light. Slowly add the hot sugar syrup in a thin stream, whisking constantly. Pour into a large saucepan and cook over low heat, stirring with a wooden spoon until slightly thickened.

First make the lemon gelée - even better if you have Meyer lemons at your disposal - and let it set in the glasses (this will take about an hour, so plan accordingly). Then make the blood orange jelly and pour on top of the lemon layer. The lemon layer is thinner than the blood orange layer.

1 tablespoon powdered unflavored gelatin (1 envelope plus 1/2 teaspoon)
1 1/4 cups water
6 to 7 tablespoons sugar (to taste; I like to use organic sugar, which is coarser than regular granulated sugar and has an off-white color)
2/3 cup strained freshly squeezed lemon or Meyer lemon juice
2 tablespoons powdered unflavored gelatin (2 envelopes plus 1 teaspoon)
1/2 cup water
1/4 cup sugar
3 1/2 cups freshly squeezed blood orange juice, all but 1/2 cup of it strained of pulp

Steps:

  • Get out six 6- or 8-ounce glasses (I use 6-ounce tumblers that taper out from the bottom).
  • Make the lemon layer. Place the gelatin in a medium bowl and pour in 1/4 cup of the water. Allow the gelatin to sit and "bloom" for 10 minutes. Combine the remaining water and the sugar in a saucepan and bring to a bare simmer. Simmer until the sugar has dissolved and remove from the heat. Pour over the gelatin mixture and stir until the gelatin has dissolved. Stir in the lemon juice. Pour about an inch into each of the glasses. Place in the refrigerator until set, about 1 hour.
  • Make the blood orange gelée. Juice all but one of the oranges and strain. Juice the remaining orange, strain out the seeds but not the pulp, and add to the strained juice. Place the gelatin in a medium bowl and pour in 1/4 cup of the water. Allow the gelatin to sit and "bloom" for 10 minutes. Combine the remaining water and the sugar in a saucepan and bring to a bare simmer. Simmer until the sugar has dissolved and remove from the heat. Pour over the gelatin mixture and stir until the gelatin has dissolved. Stir in the orange juice. Make sure that the lemon layers are set and fill the tumblers with the orange juice mixture. If you want, you can make different patterns, alternating stripes of orange and yellow, but you will have to allow each layer to set before you add the next one. Refrigerate for several hours, until set.
