Tips:

  • Use fresh blood oranges for the best flavor. If you can't find blood oranges, you can use regular oranges, but the muffins will not have the same vibrant color.
  • Grate the orange zest finely. This will help to release the flavor of the orange into the muffins.
  • Do not overmix the batter. Overmixing can make the muffins tough.
  • Fill the muffin cups only about 2/3 full. This will allow the muffins to rise properly.
  • Bake the muffins until a toothpick inserted into the center comes out clean. This will ensure that the muffins are cooked through.
  • Let the muffins cool for a few minutes before removing them from the muffin tin. This will help to prevent them from breaking.

Conclusion:

These blood orange and pineapple muffins are a delicious and easy-to-make treat. They are perfect for breakfast, brunch, or a snack.
