2 pints cherry tomatoes
1/4 cup unsalted, roasted almonds

1 teaspoon paprika
Pinch of cayenne pepper
Kosher salt, freshly ground pepper
3 teaspoons vegetable oil

Time 10m

Yield 2 servings

Number Of Ingredients 3

2 tablespoons butter
8 ounces green beans, trimmed
1 tablespoon soy sauce

Steps:

  • Heat a cast-iron skillet over medium-high heat. Add the butter and when melted, add the beans. Let the beans sit and blister for about 90 seconds, then toss and allow to blister some more. Add the soy sauce, toss to coat the beans and serve.

Tips:

  • Choose fresh, tender green beans. Look for beans that are bright green in color and have no blemishes. Avoid beans that are limp or have brown spots.
  • Blanch the green beans before blistering them. This will help them retain their color and crispness. To blanch the beans, bring a large pot of salted water to a boil. Add the green beans and cook for 2-3 minutes, or until they are bright green and tender. Immediately transfer the beans to a bowl of ice water to stop the cooking process.
  • Use a hot skillet to blister the green beans. This will help them get nice and charred. Heat a large skillet over medium-high heat. Add the green beans and cook, stirring occasionally, until they are blistered and slightly charred, about 5-7 minutes.
  • Make the tomato-almond pesto ahead of time. This will save you time when you're ready to assemble the dish. The pesto can be stored in the refrigerator for up to 3 days.
  • Serve the blistered green beans with the tomato-almond pesto immediately. This dish is best enjoyed fresh.

Conclusion:

This recipe for blistered green beans with tomato-almond pesto is a delicious and easy way to enjoy fresh green beans. The beans are blanched and then blistered in a hot skillet, which gives them a nice charred flavor. The tomato-almond pesto is made with fresh tomatoes, basil, almonds, and Parmesan cheese, and it adds a bright and flavorful touch to the dish. This recipe is perfect for a quick and easy weeknight meal, and it's also a great side dish for grilled chicken or fish.
