WARM ASPARAGUS WITH TARRAGON VINAIGRETTE

Warm Asparagus With Tarragon Vinaigrette image

This is one of two Runner-Up recipes for 1993 in the San Francisco Chronicle, and was developed by Georgeanne Brennan.

Provided by evelynathens

Categories     Vegetable

Time 13m

Yield 4-6 serving(s)

Number Of Ingredients 8

2 tablespoons Dijon mustard
1/4 cup champagne vinegar
1/4 teaspoon salt
1/4 teaspoon fresh ground pepper
1/2 cup olive oil
2 shallots, peeled and finely chopped
2 tablespoons minced fresh tarragon
2 lbs asparagus

Steps:

  • Put the mustard in a small bowl. Whisk in the vinegar, salt and pepper. Slowly add the olive oil, whisking constantly, until completely incorporated. Stir in the shallots and tarragon. Set aside for at least 15 minutes.
  • Trim the asparagus, discarding woody ends. Steam, roast or grill the spears whole until just tender when pierced with a fork. Do not overcook.
  • Arrange the still-warm asparagus on a warm serving plate, spoon the dressing over it and turn the asparagus gently to coat.

Tips:

  • Choose the right asparagus: Look for spears that are bright green and have tight, closed tips. Avoid spears that are wilted, limp, or have brown or yellow spots.
  • Blanch the asparagus properly: Blanching is a quick process that helps to preserve the asparagus's鮮豔的 color and crisp texture. To blanch the asparagus, bring a large pot of salted water to a boil. Add the asparagus spears and cook for 1-2 minutes, or until the asparagus is bright green and tender. Immediately remove the asparagus from the boiling water and plunge it into a bowl of ice water to stop the cooking process.
  • Make the tarragon dressing ahead of time: The tarragon dressing can be made up to 2 days in advance. This will allow the flavors to meld and develop.
  • Serve the asparagus warm or cold: Blanched asparagus can be served warm or cold. If you are serving it warm, reheat it gently in a sauté pan with a little bit of butter or olive oil. If you are serving it cold, chill it in the refrigerator for at least 30 minutes before serving.

Conclusion:

Blanched asparagus with tarragon dressing is a simple but elegant dish that is perfect for any occasion. The asparagus is tender and crisp, and the tarragon dressing is light and flavorful. This dish is sure to impress your guests!
