PARMESAN BAKED TILAPIA WITH ZUCCHINI RECIPE - (4/5)

Parmesan Baked Tilapia with Zucchini Recipe - (4/5) image

Provided by esperling

Number Of Ingredients 11

6 - 4 oz. tilapia fillet (any mild fish will work)
2-3 zucchini squash, sliced or cut into smaller pieces
1/8 cup lime or lemon juice (I used lime)
3/4 cup grated parmesan cheese
4 tablespoons of Butter room temperature
4 tablespoons mayonnaise
4 tablespoons finely chopped green onions
1/2 teaspoon seasoning salt
1/2 teaspoon dried basil
Black pepper (preferably fresh ground) to taste
Few dashes hot pepper sauce (optional)

Steps:

  • 1.Preheat oven to 350 degrees Fahrenheit. 2.Place the fillets and zucchini in a buttered baking dish. 3.Brush the tops with juice. 4.Bake fish in preheated oven 20 to 30 minutes or until fish just starts to flake. 5.Meanwhile, combine the cheese, butter, mayonnaise, onions and seasonings in a bowl. Mix well with fork. 6.When the fish is ready, spread the top with the cheese mixture and turn on the broiler or high heat, and bake until golden brown (about 5 minutes). *Baking time will depend on the thickness of the fish you use. Watch the fish closely so that it does not overcook.

Tips:

  • Choose the freshest tilapia fillets you can find. Look for fillets that are firm, bright pink, and have a mild, slightly sweet smell. Avoid any fillets that are slimy or have a strong fishy odor.
  • Make sure the zucchini noodles are spiralized into thin, even strands. This will help them cook evenly and absorb the flavors of the blackened tilapia and sauce.
  • Don't overcrowd the pan when searing the tilapia fillets. If the pan is too crowded, the fillets will steam instead of sear and won't develop that nice blackened crust.
  • Be careful not to overcook the tilapia fillets. Tilapia is a delicate fish, so it cooks quickly. Overcooked tilapia will be dry and tough.
  • Serve the blackened tilapia with zucchini noodles immediately. This dish is best when served hot and fresh.

Conclusion:

Blackened tilapia with zucchini noodles is a delicious and healthy meal that is easy to make. This dish is perfect for a weeknight dinner or a casual lunch. The tilapia is blackened to perfection and served over a bed of zucchini noodles that are tossed in a light and flavorful sauce. This dish is sure to please everyone at the table.
