As long as I can remember, my mother has been making blackberry dumplings. They finish cooking while you eat-and they really do make you hurry through Sunday dinner! 1 quart fresh or frozen (loose-pack) blackberries
1 cup plus 1 tablespoon sugar, divided
3/4 teaspoon salt, divided
1/2 teaspoon lemon extract
1-1/2 cups all-purpose flour
2 teaspoons baking powder
1/4 teaspoon ground nutmeg
2/3 cup 2% milk
Optional: cream or whipped cream

Steps:

  • In a Dutch oven, combine the blackberries, 1 cup sugar, 1/4 teaspoon salt and lemon extract. Bring to a boil; reduce heat and simmer for 5 minutes., Meanwhile, in a bowl, combine the flour, baking powder, nutmeg and remaining sugar and salt. Add milk; stir just until mixed. (Dough will be very thick.), Drop by tablespoonfuls into 6 mounds onto hot blackberry mixture; cover tightly and simmer for 15 minutes or until a toothpick inserted in a dumpling comes out clean. , Spoon into serving dishes. Serve with cream or whipped cream if desired.

We use to have these on the 4th of July while the kids did their own fireworks show in front of grampa's house and at Christmas after opening presents. It brings back many warm memories.

1/2 gal blackberries(you can use frozen, canned or fresh but boy are fresh ones good)
1 c sugar
2 c bisquick mix
2/3 c milk
- ice cream

Steps:

  • 1. Put blackberries in large pot, cover with water. Add about 1 cup sugar. Bring to a boil and cook about 5 minutes. You want this to start to be a little syrupy. You can either remove the seeds now or leave them in. We actually got fancy and got them an automatic strainer that removed them.
  • 2. If you removed the seeds put the pulp back in the pot with the juice and heat back up to boiling. You add the dumplings next. Now if you have a great recipe for dumplings you can use it, but we just use the one on the back of the bisquick box and dropped tablespoon size dough into the boiling blackberry mixture and reduce the heat. When dumplings are puffed and done, about 10 minutes dish up and serve hot.
  • 3. Add a scoop of ice cream on top it's wonderful. I'll list the Bisquick recipe for dumplings below. Stir 2 cups Bisquick mix and 2/3 cup milk until soft dough forms. Drop by spoonfuls into boiling mixture. Reduce heat, cook uncovered for 10 minutes.

1 recipe biscuit mix. you can use a homemade biscuit recipe, or bisquick, or even the refrigerated grands biscuits.
2-3 c blackberries or dewberries, rinsed and lightly dried with a paper towel
3/4 to 1 c sugar
water as necessary

Steps:

  • 1. First, make up the biscuit dough, and cut into large, flat biscuits. Or separate out the Grands biscuits and press them flatter. Place approximately 2 tablespoons berries in the center of each biscuit and fold the dough around them, sealing and making them into a ball.
  • 2. Place remaining berries and the sugar in a medium heavy-bottomed saucepan. Add 3-4 tablespoons water. Heat over medium heat until the mixture comes to a boil, then turn very low so you have a slow simmer. Stir often during this process. You may add up to ½ cup water or so, until you have a nice syrup consistency.
  • 3. Drop the dumplings on top of the simmering syrup, cover, and cook very low until dumplings are cooked and just start to dry out. Stir carefully if it appears to be sticking; you don't want to burn the berries. When cooked, stir all the dumplings together to mix with the syrup.

My mother's specialty, she was the oldest of 6 children, her mother died when she was 12 and she cooked for the family from 12 on. Blackberries were plentiful in Southern Missouri in summer and she made the blackberry dumplings for her siblings instead of a cobbler. I have never seen a recipe for the dumplings so I am thinking this is something my mother devised herself perhaps a quart of blackberries went further by making dumplings instead of a cobbler.

1 quart fresh blackberries
2 cups white sugar, or to taste
2 cups water
2 tablespoons butter
1 teaspoon cinnamon
2 cups flour
1 teaspoon salt
¼ cup shortening
1 egg yolk
5 tablespoons milk

Steps:

  • Place blackberries, sugar, water, butter, and cinnamon in a large saucepan. Cook and stir occasionally over medium heat until have started to break down and form a sauce, about 20 to 30 minutes.
  • Meanwhile, whisk together the flour and salt in a mixing bowl. Cut in the shortening with a knife or pastry blender until the mixture resembles coarse crumbs. Stir the egg yolk into the crumbs. Add the milk a tablespoon at a time, tossing with a fork, until the flour mixture is moistened. Do not add more milk than you need: when you squeeze a handful of the moistened pastry mixture, it should form a ball. Divide the dough in half and shape into balls.
  • Roll one ball into a 1/4-inch thick round, like a pie crust. Using a floured knife cut lengthwise 2 to 3 inch wide strips of dough. Repeat with the second ball of dough.
  • Holding each strip of dough over the boiling blackberries pinch off 4-inch lengths and drop into the berries. Repeat until all the dough has been used. Cook the dumplings over medium heat for 15 minutes. You may push the dumplings down into the juice but do not stir until they are fully cooked or they will clump together.

'Blackberry Dumplings

In Berry season, we put up berries in the freezer, and on Cool evenings we enjoy goodies like this favorite dessert, in front of the Fire.

PART 1 BLACKBERRY MIXTURE
3 pt ripe blackberries
3/4 cup water
1 cup sugar
1 tsp cinnamon
1 1/2 Tbsp butter softened, no margine
PART 2 DUMPLING BATTER
2 cup flour
3 Tbs sugar
1 Tsp salt
3 1/2 Tsp baking powder
1 egg
milk to moisten batter

Steps:

  • 1. Combine all ingredients in Part 1 in large stove top pan, and set aside.
  • 2. Sift all dry ingredients in part 2, into mixing bowl. Add: egg and mix well. Add enough milk to make a stiff batter and set aside.
  • 3. Bring Blackberry Mixture to a boil. Drop Dumplings into batter, a Teaspoon at a time. Cover and simmer for 15-20 minutes. Serve with Whip cream, or Vanilla Ice cream.

Tips:

  • For the best results, use fresh blackberries. If using frozen blackberries, thaw them completely before using.
  • To make the dumplings, use a pastry cutter or two forks to cut the butter into the flour mixture until it resembles coarse crumbs.
  • Add just enough milk to the flour mixture to form a dough. The dough should be soft and slightly sticky.
  • When dropping the dumplings into the boiling water, use a spoon to gently slide them in. Do not drop them directly into the water, as this could cause them to break apart.
