BLACKBERRY CORDIAL

Blackberry Cordial image

After trying lemoncello, and learning how simple it is to make, in the middle of berry season here, this was inevitable. Blackberries, vodka and simple syrup combined to produce an absolutely delicious nectar. I used what I had on hand, which was 80 proof vodka, and it does freeze. For this reason I suggest using 100 proof vodka. Other than that nothing could be simpler.

Yield 2 1/2 quarts,approximately

Number Of Ingredients 4

1/2 gallon fresh clean blackberry
1 (750 ml) bottle 100 proof vodka
2 cups water
2 cups sugar

Steps:

  • Fill quart jars with blackberries. Pour vodka in to cover berries. Put on the lids and put jars in a cool, dark place and forget about them for 2 to 4 weeks. Then, pour contents through a strainer and reserve liquid. In a heavy saucepan combine sugar and water and bring to boil, long enough to dissolve sugar. When this syrup cools a bit, add to blackberry liquid and stir. Pour liquid into container of choice and put in freezer. When chilled, it's good as is or, as we tried it, in a juice glass with ginger ale. It's indescribably good.

2 c fresh blackberries
3 c brandy
1 1/2 c honey

It's also the best thing for an upset stomach.)

Provided by hlovell

Number Of Ingredients 8

4 cups blackberries, washed well
3 cups water
2 sticks cinnamon
1 bay leaf
4 cloves
4 to 5 black peppercorns
1 cup light brown sugar, packed
1 1/4 cups brandy

Steps:

  • Place blackberries, water, , cinnamon, bay leaf , cloves and peppercorns in a saucepan. Simmer gently for 30 minutes, stirring often and mashing the berries. Remove from heat and strain through cheesecloth without squeezing. The yield will be about 4 cups of blackberry juice. Stir in brown sugar while the liquid is still warm until sugar dissolves. Let cool completely. Stir in brandy. Sterilize jars by boiling the jars and lids for 10 minutes. Remove from water. Pour cordial into sterilized pint canning jars, screw on lids and store in cool, dark place for at least two weeks before serving.

Tips:

  • Choose ripe, flavorful blackberries: The quality of your cordial will depend on the quality of your blackberries. Make sure to select berries that are plump, juicy, and deeply colored.
  • Use a good quality vodka: The type of vodka you use will also affect the flavor of your cordial. Choose a vodka that is smooth and neutral in flavor.
  • Control the sweetness: The amount of sugar you add to your cordial is a matter of personal preference. If you like a sweeter cordial, add more sugar. If you prefer a less sweet cordial, add less sugar.
  • Let the cordial age: For a more complex flavor, let the cordial age for at least a week before drinking. The longer you age it, the better it will taste.
  • Serve chilled: Cordial is best served chilled. You can serve it on its own or use it to make cocktails or other mixed drinks.

Conclusion:

Blackberry cordial is a delicious and versatile liqueur that can be enjoyed on its own or used to make cocktails or other mixed drinks. It's also a great way to preserve the flavor of fresh blackberries. With just a few simple ingredients and a little time, you can make your own delicious blackberry cordial at home. So next time you have a bountiful harvest of blackberries, be sure to try making some cordial. You won't be disappointed!
