MEATLOAF RECIPE

Meatloaf recipe image

Recipe video above. Meatloaf is so much more than a giant hunk of ground beef in a loaf shape. It should ooze with flavour, be moist and tender yet not crumble apart when sliced. And the caramelised glaze is the crowning glory!

Categories     Main

Time 1h30m

Number Of Ingredients 14

1 cup panko breadcrumbs ((Note 1))
1 large onion (, grated (brown, yellow))
1 kg / 2 lb ground beef (mince) (, preferably not lean)
2 eggs
3 garlic cloves (, minced)
1 tsp Worcestershire Sauce
1/4 cup tomato ketchup
1/4 cup chopped parsley ((optional), or 2 tsp dried parsley or basil)
1 tsp dried thyme
2 beef bouillon cubes (, crumbled or 2 tsp beef powder (Note 2))
1 tsp black pepper
1/2 cup tomato ketchup
2 tbsp cider vinegar
1 tbsp brown sugar (, lightly packed)

Steps:

  • Preheat oven to 180C/350F. Oil or spray a loaf tin. (Note 3)
  • Glaze: Mix together in a small bowl. Set aside.
  • Meatloaf: Place breadcrumbs in a very large bowl. Grate over onion. Mix so the breadcrumbs are all wet. (Note 4)
  • Add remaining ingredients. Mix well using your hands. Form into a loaf shape, pinching together then smoothing over creases and cracks (helps prevent cracks during baking).
  • Transfer into loaf tin. Brush generously with glaze, using about 1/2.
  • Bake for 45 minutes. Remove from oven and brush with most of the remaining glaze. If there is excess fat pooling, scoop/pour it off.
  • Bake for a further 30 minutes. Remove from oven.
  • Stand for 10 minutes before turning out and cutting into thick slices. You will probably get a bit of crumbling just on the edges of the first couple of slices, this is normal and indicative of the tenderness of the meatloaf (zero crumble indicates firm packed harder meatloaf which isn't as enjoyable!).
  • Ideal served with a dollop of ketchup, creamy mashed potatoes and steamed vegetables.

Time 1h32m

Yield 4

Number Of Ingredients 15

1 1/2 pounds ground beef (80/20 or 85/15)
20 saltine crackers, crushed
1/2 cup finely chopped onion
1/4 cup finely chopped green bell pepper
1 large egg
1 teaspoon paprika
1/2 teaspoon garlic powder
1/4 teaspoon salt
1/2 teaspoon dried thyme leaves
1/4 teaspoon ground black pepper
1/3 cup ketchup
2 tablespoons milk
1 teaspoon Worcestershire sauce
For Topping:
1/2 to 3/4 cup ketchup or barbecue sauce

Steps:

  • Gather the ingredients. Pre-heat the oven to 350 F.
  • Grease an 8 1/2 x 4 1/2-inch loaf pan or line it with foil and then lightly grease it. Alternatively, for a free-form loaf, line a rimmed baking pan with foil.
  • In a large bowl, combine the ground beef with the crushed saltines, onion, green pepper, egg, paprika, garlic powder, salt, thyme, black pepper, 1/3 cup of ketchup , milk, and Worcestershire sauce .
  • Pack the meat mixture into the loaf pan or shape it and place it on the baking pan.

(If you have instead swapped ground turkey or chicken for the beef, cook the loaf to an internal temperature of 165 F.)
  • Let the meatloaf rest for ten minutes before slicing so it holds together well. Then, serve and enjoy!

Our final version incorporates an ideal blend of seasoned ground beef and pork, aromatics, and breadcrumbs and bakes in a freeform loaf on a baking sheet instead of in a loaf pan for maximum browning. The result is a loaf that is savory, tender, and juicy, yet holds together well when sliced.

Yield 8 servings

Number Of Ingredients 13

1 cup fine fresh breadcrumbs (from 6 slices firm white bread; see Cooks' Note below)
1/3 cup whole milk
1 medium onion, coarsely chopped
1 celery stalk, coarsely chopped
4 garlic cloves
2 tablespoons neutral vegetable oil, such as grapeseed
2 1/4 teaspoons kosher salt, divided
1 1/2 teaspoons freshly ground black pepper, divided
3 tablespoons Worcestershire sauce
1 1/2 pounds ground beef chuck, preferably 20% fat
1/2 pound ground pork
2 large eggs
1/2 cup ketchup, divided, plus more for serving

Steps:

  • Position rack in center of oven; preheat to 350°F. Line a rimmed baking sheet or 13x9" shallow baking dish with foil. Soak breadcrumbs in milk in a large bowl until ready to use.
  • Pulse onion, celery, and garlic in a food processor until finely chopped. (Alternatively, you can finely chop by hand.)
  • Heat oil in a large skillet over medium. Add onion mixture, 1 tsp. salt, and 1/2 tsp. pepper. Cook, stirring occasionally, until softened, 5-7 minutes. Remove from heat, stir in Worcestershire, and scrape into bowl with breadcrumb mixture. Add beef, pork, eggs, 1/4 cup ketchup, and remaining 1 1/4 tsp. salt and 1 tsp. pepper, then mix with your hands to combine.
  • Form meatloaf mixture into a long, well-packed, approximately 5"-wide loaf shape on prepared baking sheet. Brush top of loaf with 1/4 cup ketchup. Bake meatloaf until an instant-read thermometer inserted into the center registers 155°F, 60-75 minutes. Let rest 15 minutes before slicing. Serve with more ketchup alongside.
  • Do Ahead
  • Meatloaf can be made 3 days ahead; wrap in foil and chill, or freeze for up to 3 months.

Tips:

  • Choose the right ground meat: For a flavorful meatloaf, use a combination of ground beef and ground pork. You can also use ground turkey, but it may be a bit drier.
  • Season the meatloaf well: Don't be afraid to add plenty of spices and herbs to the meatloaf mixture. This will help to enhance the flavor. Some good options include garlic, onion, parsley, thyme, and rosemary.
  • Use a good quality breadcrumb: The breadcrumbs help to bind the meatloaf together and add moisture. Use fresh breadcrumbs for the best results.
  • Mix the meatloaf mixture thoroughly: Make sure that all of the ingredients are evenly distributed throughout the meatloaf mixture. This will help to ensure that the meatloaf cooks evenly.
  • Form the meatloaf into a loaf shape: Place the meatloaf mixture into a loaf pan and press it down firmly. This will help to keep the meatloaf from falling apart during cooking.
  • Bake the meatloaf at a high temperature: This will help to sear the outside of the meatloaf and keep the inside moist. Reduce the heat after 15 minutes to allow the meatloaf to cook through without drying out.
  • Let the meatloaf rest before slicing: This will help the meatloaf to hold its shape and make it easier to slice.

Conclusion:

Black pepper crusted meatloaf is a classic comfort food that is easy to make and always a crowd-pleaser. With its flavorful crust and moist interior, this meatloaf is sure to be a hit at your next potluck or dinner party. So next time you're looking for a hearty and delicious meal, give this black pepper crusted meatloaf a try. You won't be disappointed!
