Time 15m

Yield 2 Cups, 1 serving(s)

Number Of Ingredients 3

1 (14 ounce) can black olives (whole or sliced)
1 (8 ounce) package cream cheese, softened
chips, veggies, crackers, etc

Steps:

  • Reserve black olive juice. Chop black olives.
  • In a medium sized bowl whip the cream cheese with a hand blender or a fork.
  • Add black olives and about 2 tablespoons of the black olive juice and mix. Add more juice until you reach your desired consistency (I like it creamy but not thinned out). You can also add things like worchestershire, paprika, garlic salt, etc if you'd like to add depth of flavor but I like it just how it is!
  • Serve with chips, veggies, crackers, or whatever else you may like!

Time 15m

Yield About 2 1/2 cups

Number Of Ingredients 6

2 cups oil-cured black olives, pitted and minced
2 cloves fresh garlic, minced
1 tablespoon lemon rind, minced
1/4 teaspoon minced chili pepper
2 tablespoons fresh rosemary
1/4 cup olive oil

Steps:

  • In a large bowl, combine the ingredients and blend with a fork. If using a food processor, be very careful not to over-process; a chunky texture is better. Store in a tightly sealed container in the refrigerator for up to one month.
  • To use the olive paste as a marinade, slather chicken, fish, beef or veal well and marinate for up to 6 hours before cooking. The mixture can also be used as a sauce by spooning over meat, poultry or fish in the last five minutes of cooking.

BLACK OLIVE PASTE

Categories     Spreads

Time 20m

Yield 12 serving(s)

Number Of Ingredients 8

1/3 cup olive, kalamata, pitted
2/3 cup olive, dry cured, pitted
3/4 cup olive oil
3 -5 garlic cloves, peeled
1 tablespoon lemon juice
1 tablespoon chopped flat leaf parsley
1/2 cup yellow onion, chopped
1 pinch sugar

Steps:

  • To pit the olives, you can use a cherry/olive pitter, but I've found that the olives frequently slip through the holes instead of just the pits.
  • Another way to pit olives is to put them inside a folded kitchen towel and then bang on them with a mallet, cutting board, small frying pan, or whatever suits your fancy.
  • Sure the olives get bruised, but what do you think is going to happen in the food processor?.
  • Mixing raw garlic and olive oil provides an ideal breeding ground for the anaerobic bacteria which cause botulism.
  • If I'm going to keep the paste around for a number of days, which I usually do, I'll mince the garlic, add it to the oil and then heat both in the microwave.
  • I try not to cook the garlic too much in this manner- you just need to heat the oil and garlic up to 140 or 150 degrees for a while.
  • Mix all of the ingredients in food processor.

Tips:

  • Use a food processor or blender to make the paste smooth and creamy.
  • If you don't have a food processor or blender, you can finely chop the olives and raisins by hand.
  • Add more or less lemon juice to taste.
  • Garnish the dip with fresh parsley or thyme.
  • Serve the dip with crackers, bread, or vegetables.

Conclusion:

Black olive and raisin paste dip is a delicious and easy-to-make appetizer that is perfect for any occasion. It is made with simple ingredients that are easily accessible. The dip can be made ahead of time and stored in the refrigerator for up to a week. It is a great way to use up leftover olives and raisins. This dip is also a good source of healthy fats, fiber, and antioxidants.
