8 slices multigrain bread
1/4 cup apricot preserves
1/2 pound sliced deli ham
1 round (8 ounces) Brie cheese, rind removed, sliced
3 tablespoons butter, softened

Steps:

  • Spread 4 bread slices with half of the preserves. Layer with ham and cheese. Spread remaining bread with remaining preserves; place over cheese, preserves side down. Spread outsides of sandwiches with butter., In a large cast-iron or other heavy skillet, toast sandwiches over medium heat until golden brown and cheese is melted, 2-3 minutes on each side.

6 slices black forest ham
½ (8 ounce) wedge Brie cheese, sliced
2 tablespoons apricot preserves
1 tablespoon Dijon mustard
4 thick slices Italian bread
1 tablespoon olive oil

Steps:

  • Assemble the sandwiches by layering the ham, brie cheese, apricot preserves, and mustard in equal amounts on two pieces of bread, topping with the remaining two slices of bread. Brush the top of each sandwich with olive oil.
  • Heat a grill pan over medium heat. Once the pan is hot, lie the sandwiches, oiled side down, in the pan. Brush the top of each sandwich with oil. Cook each side until the bread is golden brown, about 3 minutes per side.

1 baguette, split in half lengthwise with some of the bread removed
1/4 cup blackberry preserves
1 lb black forest ham, sliced thinly
1/2 lb brie cheese, rind removed and cut into strips
salt
pepper

Steps:

  • Spread Blackberry Preserves in each of the bread pieces. Layer ham and Brie on top. Season lightly with some salt and pepper.
  • Broil for about 4-5 minutes until cheese is melted.
  • Cut into pieces and serve.

8 slices rye bread (Toasted lightly)
8 red leaf lettuce
8 slices red Spanish onions
1/2 lb black forest ham (Sliced)
8 slices Limburger cheese (*Weisslacker or Beer Cheese)
3 heirloom tomatoes (Sliced)
1 pint cherry tomatoes
8 kosher dill pickles (Sliced)

Steps:

  • In a small bowl whisk mayonnaise, parsley, mustard, orange honey, sea salt and white pepper. Spread mayonnaise over bread.
  • Add lettuce, red onion, Black Forest Ham, *Weisslacker Cheese, sliced tomato, lettuce and top the sandwich.
  • Slice sandwiches in half and place on serving plates.

3 large eggs
1 1/2 tablespoons dijon-style mustard
1 1/4 teaspoons finely-chopped fresh tarragon leaves
1/4 teaspoon fresh ground pepper
8 slices egg bread (1/4-inch-thick)
2 tablespoons butter
8 ounces teleme cheese, cut into 16 slices (or use Monterey Jack)
8 slices black forest ham (1-ounce each)

Steps:

  • In a medium bowl, lightly beat together the eggs, mustard, tarragon, and pepper.
  • Dip each bread slice into the egg mixture, making sure that both sides are thoroughly coated.
  • Put dipped slices on a plate and set aside.
  • In two large sauté pans, melt one tablespoon butter in each over medium-high heat.
  • Add four bread slices to each pan.
