BLACK FOREST COFFEE CAKE RECIPE

Black Forest Coffee Cake brings cherries and chocolate to your day. Great with coffee or tea.

Categories     Snacks

Time 50m

Number Of Ingredients 13

1/2 cup unsalted butter, softened
1 3/4 cups granulated sugar
2 eggs
2 teaspoons pure vanilla extract
3 1/2 cups all-purpose flour
2 tablespoons baking powder
1 teaspoon salt
1 1/2 cups milk
21 ounces cherry pie filling
4 ounces semisweet chocolate, coarsely chopped
1/3 cup butter, cold
1/2 cup all-purpose flour
1/4 cup turbinado sugar

Steps:

  • Preheat the oven to 375°F. Butter a 9 X 13 baking dish. In a large bowl cream together the butter and sugar. Mix in the eggs and vanilla until the batter is fluffy. In another bowl whisk together the flour, baking powder, and salt. Alternate adding the dry mixture and the milk, starting and ending with the flour, and mixing between each addition. Fold in the cherry pie filling and chopped chocolate, and then pour the batter into the prepared pan. To make the streusel topping cut the cold butter into the flour and turbinado sugar. My favorite way to do this is to grate the butter with a box grater and then combine everything with my fingers. Sprinkle the streusel over the cake batter. It will be clumpy. Just try to cover the surface area as evenly as you can and don't worry about all the gaps. Bake for 35 - 40 minutes - a pick inserted into the center will come out mostly clean when the cake is done (the buttery streusel will still look a little gooey on your toothpick). Let the cake cool before slicing.

BLACK FOREST CAKE

Black Forest Cake image

This Black Forest Cake combines rich chocolate cake layers with fresh cherries, cherry liqueur, and a simple whipped cream frosting.

Provided by Olivia

Categories     Dessert

Time 2h45m

Number Of Ingredients 20

2 cup all-purpose flour
2 cups granulated sugar
3/4 cup Dutch-processed cocoa powder (sifted)
2 tsp baking soda
1 tsp baking powder
1 tsp salt
1/2 cup vegetable oil
1 cup buttermilk (room temperature)
1 cup hot water or hot coffee
2 large eggs
2 tsp vanilla
1/2 cup granulated sugar
1/2 cup water
1/4 cup cherry liqueur
3 cup whipping cream (cold)
1/4 cup powdered sugar (sifted)
250 g good quality dark chocolate (chopped)
2 1/2 cups cherries (pitted and cut in half)
1 bar dark chocolate (for shavings (optional))
cherries

Steps:

  • Preheat oven to 350F, grease two 8" round baking pans and dust with cocoa powder. Line bottoms with parchment.
  • Place all dry ingredients into the bowl of a stand mixer fitted with a paddle attachment. Stir to combine.
  • In a medium bowl whisk all wet ingredients (pour hot water in slowly as not to cook the eggs).
  • Add wet ingredients to dry and mix on medium for 2-3 mins. Batter will be very thin.
  • Pour evenly into prepared pans. I used a kitchen scale to ensure the batter is evenly distributed.
  • Bake for 45 mins or until a cake tester comes out mostly clean.
  • Cool 10 minutes in the pans then turn out onto a wire rack to cool completely.
  • Place sugar and water into a small pot. Stir and bring to a boil. Simmer for 1 min then remove from heat. Stir in cherry liqueur and allow to cool completely.
  • Whip cream and powdered sugar until stiff peaks. Ideally in a cold bowl with a cold whisk.
  • Melt chocolate over a double boiler or in 20 second bursts in the microwave.
  • Using a large offset spatula, spread melted chocolate in a thin layer on a large sheet of parchment.
  • Roll up from the short side of the parchment. Place on a baking sheet and refrigerate or freeze until firm.
  • Unroll to create chocolate bark.
  • Cut each cake layer in half horizontally.
  • Place one layer of cake on a cake stand or serving plate. Brush generously with cherry syrup.
  • Top with approximately 1 cup whipped cream and spread evenly. Top with approximately 1 cup of cherries and gently press them into the whipped cream. Repeat with remaining layers and frost the outside of the cake.
  • Decorate with chocolate bark, chocolate shavings, rosettes, and cherries if desired.

Tips:

  • Use high-quality coffee. Freshly ground coffee beans will give your cake the best flavor.
  • Brew your coffee ahead of time so that it has time to cool completely before using. You can use brewed coffee from a coffee pot or instant coffee that has been mixed with water.
  • Don't overmix the batter. Overmixing can make the cake tough. Mix just until the ingredients are combined.
  • Bake the cake in a preheated oven. This will help ensure that the cake bakes evenly.
  • Don't overbake the cake. Overbaking can make the cake dry. Check the cake for doneness a few minutes before the end of the baking time.
  • Let the cake cool completely before frosting. This will help prevent the frosting from melting.

Black Forest coffee cake is a delicious and easy-to-make cake that is perfect for any occasion. With its rich coffee flavor, creamy frosting, and sweet cherries, this cake is sure to be a hit.
