Categories     Cake     Chocolate     Dessert     Bake     Fourth of July     Kid-Friendly     Backyard BBQ

Yield 18 cupcakes

Number Of Ingredients 23

White Top
1 (8 ounce) package cream cheese
1 egg
1 tsp vanilla powder
1/3 cup white sugar
1/8 tsp salt
1 cup semisweet chocolate chips (mini chips may be preferable if you're making smaller cupcakes)
Chocolate Bottom Cake
1 1/2 cups all-purpose flour
1 cup white sugar
1/4 cup unsweetened cocoa powder
1 tsp espresso powder
1 tsp baking soda
1/2 tsp salt
1 cup milk
1/3 cup vegetable oil
1 tsp frangelico
1 tbsp cider vinegar
1 tsp vanilla extract
Equipment
Muffin Wrappers
Muffin Pan
2 mixing bowls

Steps:

  • 1. Pre-heat oven to 350 degrees and line muffin pans with approx 18 muffin wrappers. 2. Mix the White Top ingredients (cream cheese, egg, vanilla powder, sugar, and salt) until creamy. A hand-held mixer will quicken the job. Next, fold in the chocolate chips and set aside. 3. Mix the dry cake ingredients together in a large bowl (flour, sugar, cocoa, baking soda, salt, espresso powder). Make a hole in the center of the dry ingredients and add the wet ingredients (milk, vinegar, oil, frengelico, vanilla). Stir together until well blended. 4. Fill muffin wrappers about 1/3 full with the cake batter and top with a healthy (relatively healthy) drop of the white top mixture. 5. Bake approximately 20 minutes, checking after 15. A light touch to the top should have some give, but remain firm before removing from the oven to cool at least 30 minutes. If you have the time, leaving them overnight is best.

Categories     Cake     Chocolate     Dessert     Bake     Quick & Easy

Yield Makes 18

Number Of Ingredients 16

Filling:
8 ounces cream cheese, softened
1 egg
1/3 cup sugar
1/8 tsp salt
1 cup semi-sweet chocolate chips
Cakes
1 1/2 cups flour
1 cup sugar
1/4 cup cocoa powder
1 tsp baking soda
1/2 tsp salt
1 cup water
1/3 cup vegetable oil
1 Tbsp white vinegar
1 tsp vanilla

Steps:

  • Preheat oven to 375 degrees. Line muffin tins with cupcake papers or spray or brush them with vegetable oil. Using wooden spoon (this seems to be important), blend cream cheese, egg, sugar and salt in mixing bowl. Carefully fold in chocolate chips and set aside. Combine dry ingredients in another bowl and mix well. Add remaining ingredients and blend thoroughly. Fill cupcake liners (or greased tins) about 3/4 full with batter. Drop heaping tablespoon cream cheese mixture into center of each. Bake until done, 35 to 40 minutes

Tips:

  • To achieve the perfect black bottom cupcake, it's crucial to whip the egg whites until stiff peaks form. This will ensure a light and airy texture.
  • For a rich and decadent chocolate flavor, use a high-quality cocoa powder. Dutch-processed cocoa powder is a great option, as it produces a deep, dark chocolate flavor.
  • Don't overmix the batter once you've added the dry ingredients. Overmixing can result in a tough, dense cupcake.
  • If you don't have a piping bag, you can use a zip-top bag with the corner snipped off. This will allow you to easily pipe the chocolate batter into the cupcake liners.
  • To prevent the cupcakes from sticking to the pan, use cupcake liners or grease the pan thoroughly.
  • Make sure the cupcakes are completely cool before frosting them. This will help the frosting set properly.

Conclusion:

Black bottom cupcakes are a delicious and elegant dessert that are perfect for any occasion. With their rich chocolate flavor and creamy vanilla frosting, these cupcakes are sure to be a hit. By following the tips in this article, you can create perfect black bottom cupcakes every time.
