A quick and healthy tuna salad with a different twist. I put this together for lunch today, just tossing together what sounded good. The flavors came together nicely, I thought, so I am posting the recipe. It was great served in a whole-wheat tortilla.

TUNA SALAD WITH BLACK BEANS

Tuna Salad With Black Beans image

My mom and I made this up when I was visiting last weekend... High protein and very tasty. She ate this with pork rinds (low carber) while I had it on bread. Other seasonings and amounts can be added to your taste, I'm sure. Tuna salads tend to be flexible. Not sure of the yield so I guessed, since I didn't measure.

Time 5m

Yield 3 cups, 4 serving(s)

Number Of Ingredients 7

1 (7 ounce) can tuna in water, drained
1 (14 1/2 ounce) can Italian-style diced tomatoes, drained
1 (15 ounce) can black beans, rinsed and drained
1/2 cup shredded colby (a good handful) or 1/2 cup monterey jack cheese (a good handful)
1/4 cup mayonnaise
2 hard-boiled eggs, diced
1 tablespoon parmesan cheese (optional)

Steps:

  • Combine all ingredients in a medium sized mixing bowl, stirring well to combine.
  • Enjoy with bread, crackers, pork rinds, or with a spoon. Would also be good on lettuce.

Tips:

  • Use high-quality canned tuna: Opt for tuna packed in olive oil or water instead of vegetable oil for a healthier and more flavorful option. Look for tuna that is sustainably caught and processed.
  • Rinse the tuna: Rinsing the tuna before using removes excess salt and helps to improve the texture.
  • Choose the right beans: For this recipe, black beans are the best choice, but you can also use kidney beans or pinto beans. Make sure to rinse and drain the beans before using.
  • Use fresh vegetables: Fresh vegetables add color, flavor, and nutrients to the dish. Use a variety of vegetables, such as bell peppers, onions, and corn, to create a flavorful and colorful dish.
  • Season the dish well: Don't be afraid to season the dish with salt, pepper, and other spices, such as cumin, chili powder, or paprika. This will help to enhance the flavors of the ingredients.
  • Cook the dish until the beans are tender: The beans should be tender but still hold their shape. Overcooking the beans will make them mushy.
  • Serve the dish hot or cold: Black beans and tuna can be served hot or cold. If you are serving it cold, make sure to chill it for at least 30 minutes before serving.

Conclusion:

Black beans and tuna is a delicious, healthy, and versatile dish that is perfect for any occasion. It is a great source of protein, fiber, and healthy fats. This dish can be served as a main course, a side dish, or even as a salad. With its simple ingredients and easy-to-follow instructions, this recipe is sure to become a favorite in your household.
