BLACK BEAN SOUP WITH SAUSAGE (CROCK POT)

Black Bean Soup With Sausage (Crock Pot) image

This is from All You magazine. I haven't tried it yet, but it looks delicious. Instead of black beans you can try navy beans, red kidney beans, or black-eyed peas (or a mix). You can add a cup of yellow corn, a can of diced chiles or chopped jarred pimientos just before the end of cooking time for a shot of color and flavor, or sprinkle in a few drops of hot sauce. Also, instead of sausage, you could stir in cut-up leftover ham, chicken or beef. Or try chicken or turkey sausage. Tips for Making Black Bean Soup with Sausage in a Crock Pot

  • Use high-quality ingredients: The better the ingredients, the better the soup. Look for fresh vegetables, flavorful sausage, and a rich broth.
  • Don't overcrowd the crock pot: Give the ingredients plenty of room to cook. If the crock pot is too full, the soup will not cook evenly.
  • Season the soup to taste: Add salt, pepper, and other spices to taste. You can also add a bit of cayenne pepper for a spicy kick.
  • Cook the soup on low heat for 6-8 hours: This will allow the flavors to develop and the sausage to cook through. You can also cook the soup on high heat for 4-6 hours, but be sure to stir it occasionally to prevent scorching.
  • Serve the soup with your favorite toppings: Some popular toppings include sour cream, shredded cheese, avocado, and cilantro.

Conclusion

Black bean soup with sausage is a delicious and easy-to-make meal that is perfect for a weeknight dinner or a casual party. It is also a great way to use up leftover sausage. With a few simple ingredients and a little bit of time, you can create a hearty and flavorful soup that your family and friends will love.
