1/3 cup chopped cilantro, plus more for serving
3 scallions, thinly sliced
1/4 cup extra-virgin olive oil
3 tablespoons fresh lime juice, plus wedges for serving
Kosher salt and freshly ground pepper

Steps:

1 (15 ounce) can black beans, drained and rinsed
1 (15 ounce) can red kidney beans, drained and rinsed
1 (14.5 ounce) can great northern beans, rinsed and drained
1 (10 ounce) can diced tomatoes with green chile peppers (such as RO*TEL®)
½ cup crumbled feta cheese
¼ cup grated red onion
½ teaspoon Greek seasoning
½ teaspoon garlic powder
½ cup extra-virgin olive oil
¼ cup balsamic vinegar
2 tablespoons honey mustard
1 dash Worcestershire sauce

Steps:

  • Mix black beans, kidney beans, great northern beans, diced tomatoes with green chile peppers, feta cheese, red onion, Greek seasoning, and garlic powder in a bowl.

3 cups cooked black beans, rinsed and drained
1/4 cup olive oil
3 -4 tablespoons red wine vinegar
1/4 cup chopped fresh parsley
2 -4 scallions, thinly sliced
1 small green pepper, in chunks
1/4 lb feta cheese, crumbled
2 medium tomatoes, diced

Steps:

  • Combine black beans, oil, vinegar, parsley, and scallions and marinate a minimum of 1 hour.
  • (Overnight is best) Before serving add feta, tomatoes and green peppers.
