1 package (6-1/2 ounces) pizza crust mix
1 bottle (8 ounces) taco sauce
2 medium tomatoes, seeded and chopped
3/4 cup canned black beans
1/2 cup frozen corn
1 can (4 ounces) chopped green chilies
2 green onions, chopped
1-1/2 cups shredded reduced-fat Colby-Monterey Jack cheese
Reduced-fat sour cream, optional

Steps:

  • Coat a 12-in. pizza pan with cooking spray; sprinkle with cornmeal. Prepare pizza dough according to package directions. With floured hands, press dough onto prepared pan. Bake at 450° for 7-10 minutes or until lightly browned., Spread taco sauce over crust to within 1 in. of edges. 1 tube (13.8 ounces) refrigerated pizza crust
1 medium onion, chopped
1 garlic clove, minced
1 tablespoon canola oil
1/2 cup finely chopped zucchini
1 can (15 ounces) black beans, rinsed and drained
1 can (14-1/2 ounces) Italian diced tomatoes, undrained
1-1/2 cups shredded Mexican cheese blend, divided

Steps:

  • Press dough into a greased 15x10x1-in. baking pan. Bake at 425° for 4-6 minutes or until crust just begins to brown., Meanwhile, in a large skillet, saute onion and garlic in oil until tender. Add zucchini; cook and stir for 1 minute or until crisp-tender. Add the beans and tomatoes; bring to a boil. 1 teaspoon active dry yeast
2 cups bread flour
1/4 teaspoon salt
1/2 cup lukewarm water
1/2 teaspoon cayenne pepper (optional)
1/4 cup pureed black beans (if use canned beans, rinse and drain first)

Steps:

  • Combine and knead all ingredients (I used my bread machine).
  • Let rise 50-60 minutes.
  • Roll dough on a cornmeal-covered counter.
  • Place dough in pizza pan.
  • For a thin, crispy crust, place toppings on dough and bake immediately.
  • For a thicker, chewier crust, allow dough to rise 15-30 minutes before adding toppings.
  • Place pizza on the bottom rack of oven (Preheated to 500°F) 5-10 minutes.
  • We filled our pizzas with pizza sauce, rest of the black beans, tomatoes, zucchini, onions.

2 (8 inch) tortillas
3/4 cup grated cheddar cheese, divided
3/4 cup grated pepper jack cheese, divided
1/2 tablespoon extra virgin olive oil
1 (15 ounce) can black beans, drained and rinsed
1 small yellow onion, chopped
1/2 teaspoon cumin
1/2 teaspoon smoked paprika
Salt and pepper, to taste
1/2 cup cooked, shredded chicken
1/4 cup barbecue sauce
Green onions for garnish
Cilantro for garnish

Steps:

  • Heat oven to 350 degrees, grease a baking sheet with spray. Lay one tortilla on the baking sheet, sprinkle ½ cup of cheddar and ½ cup of pepper jack evenly on the tortilla. Top with the other tortilla and bake for 5 minutes until the cheese is melted. Remove from oven and set aside. In a skillet over medium-high heat, cook the beans and onions with the olive oil for 5 minutes. Add the spices, salt & pepper.
