  • Remove the seeds and stem off of the red pepper and finely dice it.
  • Peel and dice a ripe mango. (check out this post on how to peel a mango)

  • I like to zest the lime in addition to juicing it. It adds just a bit more pop of flavor.
  • Stir all the black bean salsa recipe ingredients together.
  • Take a taste and adjust the seasoning to your taste.
  • It might need a sprinkling of salt or a drizzle of olive oil.
  • Another tasty addition is a diced avocado. YUMMY!

BLACK BEAN MANGO SALSA

Black Bean Mango Salsa image

This is such a great salsa recipe. So delicious, fresh and so tantalizing to your taste buds. I make it many times during the summer and it is BEST to use all the freshest fruits/veggies as you can. Especially the mangoes and lime juice. I usually go to the local fruit stands to buy the mangoes, not sure where they are grown, but they are so much better than the local grocery store. It's also great over chicken, or enchiladas!!

BLACK BEAN MANGO SALSA

This delicious salsa adds a new twist to soft tacos and burritos! I got the recipe last year, and it has quickly become a staple in our house! We eat it in burritos with shrimp or chicken, sour cream, and spanish rice and the rest of the regular fixin's. Also surprisingly good on salmon! If you want to give it some kick, chop up a jalapeno pepper and throw it in there!

Tips:

  • Fresh ingredients: Use fresh mangoes, black beans, and cilantro for the best flavor.
  • Ripe mangoes: Choose ripe mangoes that are slightly soft to the touch for a sweeter salsa.
  • Red onion: Use a small red onion for a milder flavor, or a larger onion for a more pronounced flavor.
  • Jalapeño pepper: Remove the seeds and ribs from the jalapeño pepper before mincing to control the heat level.
  • Lime juice: Use fresh lime juice for the best flavor. Bottled lime juice can be used, but it may not be as flavorful.
  • Cilantro: Chop the cilantro finely for the best flavor and texture.
  • Seasoning: Adjust the seasoning to your taste. Add more salt, pepper, or lime juice as needed.
  • Chill before serving: Allow the salsa to chill in the refrigerator for at least 30 minutes before serving to allow the flavors to meld.
