SWORDFISH ON BLACK BEAN AND PINEAPPLE SALSA

Swordfish on Black Bean and Pineapple Salsa image

In 1990, when Marian Burros brought this recipe to The Times, salsas were trendy, and as proof, she wrote, "that you don't have to have butter and cream to make something taste wonderful." That is no less true today, even if salsas are much more common in our cooking lives. If you're in a rush, grab some pre-cut pineapple at the market, and a can of black beans. (Drain them well.)

BLACK BEAN AND PINEAPPLE SALSA

Black Bean and Pineapple Salsa image

This is a basic chunky salsa recipe. I tried it with chopped scallions one day when I was out of fresh cilantro and was pleased with the result. It is *essential* to use fresh cilantro and jalapenos. If you don't have them, don't bother making it--seriously! Also, you can use crushed pineapple, but it makes the salsa quite watery. I recommend using tidbits instead.

Time 15m

Yield 16 serving(s)

Number Of Ingredients 7

2 (14 ounce) cans black beans, seasoned with olive oil and garlic, drained but not rinsed
2 (14 ounce) cans no-salt-added corn
1 (14 ounce) can no-salt-added diced tomatoes
1 (20 ounce) can pineapple tidbits, drained
2 fresh jalapenos, diced
1/3 cup chopped fresh cilantro
1/2 bunch scallion, chopped

Steps:

  • Remove the seeds and membranes from the jalapenos before dicing if you prefer less heat. Leave them in if you prefer more.
  • Rinse the cilantro well before chopping.
  • Combine all ingredients in a large bowl. Letting it stand for a few hours will help combine the flavors, but is not an essential step.

Tips:

  • Choose ripe, juicy pineapple for the best flavor.
  • If you don't have fresh pineapple, you can use canned pineapple, but be sure to drain it well.
  • Black beans are a good source of fiber and protein, and they add a hearty texture to the salsa.
  • Use a variety of bell peppers for a more colorful salsa.
  • Add some chopped cilantro or parsley for a fresh flavor boost.
  • Serve the salsa immediately or chill it for later.
  • This salsa is great with tortilla chips, tacos, burritos, or grilled fish or chicken.

Conclusion:

This easy black bean and pineapple salsa is a delicious and refreshing way to add some flavor to your next meal. It's perfect for parties, potlucks, or just a quick snack. With its sweet, tangy, and savory flavors, this salsa is sure to be a hit with everyone.
