MANGO, CORN, AND BLACK BEAN SALSA

Mango, Corn, and Black Bean Salsa image

My neighbor introduced me to this cool dish that can stand alone as an easy side dish or tastes great with chicken made up as fajitas. This is a recipe that can be altered to use up other fruits you have on hand. I have used a mix of mangoes and peaches to make this, and it would probably taste great with pineapple or other tart fruits, but if you like mangoes as much as I do, you will want to let that flavor dominate. Optional to chill before serving.

Tips:

  • Choose ripe, fresh mangoes: The sweetness and flavor of the salsa depend on the quality of the mangoes. Look for mangoes that are slightly soft to the touch and have a sweet aroma.
  • Use canned or cooked black beans: Canned or cooked black beans are a convenient option for this salsa. If using dried black beans, soak them overnight and cook them according to the package instructions before using.
  • Chop the ingredients evenly: Chop the mangoes, black beans, onion, jalapeño, and cilantro into small, even pieces. This will ensure that the salsa is evenly distributed and has a consistent texture.
  • Adjust the spiciness to your liking: The amount of jalapeño used in this recipe can be adjusted to your desired level of spiciness. If you prefer a milder salsa, remove the seeds and ribs from the jalapeño before chopping it. For a spicier salsa, leave the seeds and ribs in.
  • Chill the salsa before serving: Chilling the salsa for at least 30 minutes before serving allows the flavors to meld and deepen. This will result in a more flavorful salsa.

Conclusion:

Black bean and mango salsa is a vibrant and refreshing salsa that is perfect for any occasion. It is easy to make and can be customized to your liking. This salsa is a great way to add a pop of flavor to your favorite Mexican dishes or to enjoy as a dip with chips. Whether you are hosting a party or simply looking for a healthy and delicious snack, black bean and mango salsa is a great choice.
