2 cups roughly chopped arugula leaves
1 medium head radicchio, thinly sliced
1 large head endive, bottom 1/2-inch removed, then sliced into thin strips
3/4 cup low-sodium chicken broth

1 1/2 cups fresh basil leaves, thinly sliced, plus more for garnish
1/4 cup shaved Parmesan

1 pound chicken breasts (boneless and skinless, cut into 1 inch cubes, about 3 breasts)
1 large onion (chopped)
6 cloves garlic (minced)

8 ounce penne (uncooked)
24 ounce marinara sauce (1 jar)
1 cup red wine
2 cups chicken broth (low sodium or no sodium added)
1 teaspoon dried oregano
3 leaves fresh basil (roughly chopped)
Parmesan cheese (for serving (optional))

Steps:

1 lb chicken, cut in bite size pieces
4 tablespoons cajun seasoning
2 -3 tablespoons margarine
24 ounces heavy whipping cream
2 fresh tomatoes, cut into small pieces
10 ounces frozen peas, thawed
2 ounces pine nuts

  • Cook pasta, drain.
