BITTER GIUSEPPE

Bitter Giuseppe image

Cynar is a low-proof, bittersweet amaro derived from artichokes, among many other ingredients. Italians typically drink it over ice with a slice of orange. But it has found a home in many cocktails thanks to adventurous American mixologists who not only treat it as a supporting player, but also sometimes as the foundation of a drink. Such is the case with the Bitter Giuseppe, a creation of the Chicago bartender Stephen Cole. The cocktail calls for a full two ounces of Cynar. Though audacious in concept, the drink is easy to understand if you think of it as a Cynar manhattan. The lemon juice, lemon twist and extra bitters do much to lighten up the mixture, which is brighter and more buoyant than you might expect. A great aperitivo cocktail.

KILLER BEE (MEZCAL, LEMON, AND HONEY COCKTAIL)

Killer Bee (Mezcal, Lemon, and Honey Cocktail) image

A Mexico-inspired twist on the Bee's Knees. The Killer Bee replaces the gin with mezcal, a darker, smokier spirit.

Provided by Gonzalo Guzmán

Yield Makes 1 cocktail

Number Of Ingredients 3

1 1⁄2 ounces honey
2 ounces mezcal, such as Del Maguey Vida brand
1 1⁄2 ounces freshly squeezed lemon juice (from 1 lemon)

Steps:

  • To make a honey syrup, in a small bowl or jar, combine the honey with 1 1⁄2 ounces water.
  • In a cocktail shaker, combine the mezcal, lemon juice, and 3⁄4 ounce of the honey syrup (save the remaining honey syrup for another cocktail). Fill the shaker three-quarters of the way with ice and shake vigorously for 10 seconds if serving on the rocks or 15 seconds if serving "up." Strain into an ice-filled double old-fashioned glass or bucket glass, or serve up with no ice.

Tips:

  • When choosing vodka for your Bitter Bee, opt for a high-quality spirit that has a smooth and clean flavor profile. A good vodka will allow the other flavors in the cocktail to shine through.
  • Fresh lemon juice is essential for a balanced and refreshing Bitter Bee. Use a citrus juicer to extract the juice from a ripe lemon, and strain it to remove any pulp or seeds.
  • If you don't have honey syrup on hand, you can easily make your own by combining equal parts honey and hot water in a small saucepan. Stir until the honey has dissolved completely, then let it cool before using.
  • Angostura bitters are a key ingredient in the Bitter Bee, and they add a complex and slightly bitter flavor to the drink. If you don't have Angostura bitters, you can substitute another type of bitters, such as Peychaud's or Regan's.
  • Garnish your Bitter Bee with a lemon twist or a sprig of fresh mint for an extra touch of flavor and visual appeal.

Conclusion:

The Bitter Bee is a refreshing and flavorful cocktail that is perfect for any occasion. With its combination of vodka, lemon juice, honey syrup, and Angostura bitters, the Bitter Bee is sure to please even the most discerning palate. So next time you're looking for a delicious and easy-to-make cocktail, give the Bitter Bee a try. You won't be disappointed!
