Provided by á-9318

Number Of Ingredients 9

3 c. diced, unpeeled zucchini
1 lg. onion, chopped
1/2 c. grated Parmesan cheese
1/2 c. grated cheddar cheese
1/2 c. salad oil
1 c. Bisquick
4 eggs, beaten
1/2 to 1 tsp. parsley
Dash of salt and pepper

Steps:

  • Grease 9-inch pie plate or 9 x 9 square pan. Combine all ingredients. Bake at 350 degrees for 35-40 minutes or until lightly browned.

Tips:

  • Use fresh zucchini: Fresh zucchini has a higher water content, which will help to create a moist pie. If you are using frozen zucchini, thaw it completely and squeeze out any excess water before using.
  • Grate the zucchini: Grating the zucchini will help to release its moisture and make it easier to incorporate into the pie filling.
  • Use a sharp knife to slice the onions: This will help to prevent them from tearing and making the pie filling look unappetizing.
  • Don't overmix the batter: Overmixing the batter will make the pie tough. Mix just until the ingredients are combined.
  • Bake the pie in a preheated oven: This will help to ensure that the pie cooks evenly.
  • Let the pie cool before serving: This will help to prevent the pie from falling apart.

Conclusion:

Bisquick zucchini pie is a delicious and easy-to-make dish that is perfect for a summer meal. The pie is made with fresh zucchini, onions, and cheese, and it is baked in a Bisquick crust. The pie is moist and flavorful, and it is sure to be a hit with your family and friends. So next time you are looking for a quick and easy meal, give Bisquick zucchini pie a try.
