Time 15m

Yield 5 doz

Number Of Ingredients 9

2 eggs
1 cup milk
1/2 cup cooked pumpkin
1 3/4 cups Bisquick baking mix
2 tablespoons sugar
1/2 teaspoon cinnamon
1/2 teaspoon nutmeg
1/2 teaspoon ginger
1/4 cup salad oil

Steps:

  • Beat eggs in small mixer bowl on high speed 5 minutes or until thick and lemon colored. Stir in remaining ingredients.
  • Pour batter by tablespoonfuls onto MEDIUM-HOT un-greased griddle.
  • Bake until puffed and bubbles begin to break. Turn and bake other side until golden brown. About 5 dozen 2-inch pancakes. Serve with sausages and rum flavored syrup.
  • MAPLE RUM FLAVORED SYRUP: Heat 1 cup maple flavored syrup and tablespoon butter or margarine. Remove from heat; stir in 1/2 teaspoon rum flavoring. Serve warm. About 1 cup.
  • Betty Crocker's Bisquick Cookboook.

Tips:

  • Make sure your baking powder and baking soda are fresh. Old baking powder and baking soda can prevent your pancakes from rising properly.
  • Don't overmix the batter. Overmixing can make your pancakes tough.
  • Let the batter rest for a few minutes before cooking. This will allow the gluten in the flour to relax, which will also help to prevent tough pancakes.
  • Cook the pancakes over medium heat. If the heat is too high, the pancakes will brown too quickly and won't have a chance to cook through.
  • Flip the pancakes only once. Flipping them too often can make them dry and tough.
  • Serve the pancakes warm with your favorite toppings. Pumpkin pancakes are delicious with butter, syrup, whipped cream, or fruit.

Conclusion:

Bisquick pumpkin pancakes are a quick and easy breakfast that's perfect for fall mornings. They're fluffy, flavorful, and full of pumpkin spice. With just a few simple ingredients, you can have a delicious stack of pancakes on the table in no time. So next time you're looking for a tasty and festive breakfast, give these Bisquick pumpkin pancakes a try. You won't be disappointed!
