Tips:

  • Before starting, ensure all ingredients are at room temperature, especially the butter. This will help them combine smoothly and create a more consistent batter.
  • Use a Microplane zester to obtain the lemon zest easily and finely. Alternatively, use a fine cheese grater.
  • To achieve a more intense lemon flavor, use freshly squeezed lemon juice instead of bottled lemon juice.
  • For a crispier crust, pre-bake the Bisquick® crust before adding the lemon filling.
  • To prevent the lemon filling from curdling, temper the eggs. Whisk a small amount of hot lemon juice into the eggs before adding them to the remaining hot lemon juice mixture.
  • For a smooth and lump-free lemon filling, strain the mixture through a fine-mesh sieve before pouring it onto the pre-baked crust.
  • To achieve a clean and precise cut, chill the lemon squares completely before slicing them.
  • For a professional touch, dust the lemon squares with powdered sugar before serving.
