DIGESTIVE BISCUITS

Digestive Biscuits image

I spent a summer in the UK a few years back and practically lived off McVities Digestive Biscuits. Cheap and easy to find in the UK, fairly expensive and hard to find in the US, so I decided to make them myself. I was not able to find a recipe that tasted enough like them, so I made my own recipe. They have been really popular with other McVitie lovers. Hope you like them, too!

Time 35m

Yield 12-16 biscuits, 6-8 serving(s)

Number Of Ingredients 11

3/4 cup whole wheat flour
1/4 cup all-purpose flour
1/2 teaspoon baking powder
1/4 teaspoon baking soda
1/4 teaspoon cream of tartar
1/4 cup wheat bran
4 tablespoons butter
5 tablespoons brown sugar
1 tablespoon Crisco
1/2 teaspoon vanilla
3 tablespoons half-and-half cream

Steps:

  • Preheat oven to 350°F.
  • In a large bowl, mix together the flours, bran, baking powder, baking soda, and cream of tartar with a pastry blender. Mix in sugar with the pastry blender. Mix in fats with the pastry blender. The mix at this point should be crumbly and uniform. Mix the vanilla in the half-n-half and add to the mix. Mix with pastry blender until it is uniform and resembles really soft playdoh.
  • You can at this point refrigerate for 20 minutes to make the dough easier to handle, but it is not necessary. Be sure to roll out dough between two pieces of waxed paper! Roll to approximately 1/8" thickness. Cut into rounds with cookie cutter about 2 1/2 inches in diameter (I used the ring off one of my canning jars).
  • Transfer to cookie sheets or baking stone and prick with a fork. Bake 15 to 18 minutes (adjust the baking time up to dry them out more if the biscuits are too soft and fluffy), or until golden. Let cool on wire rack.
  • Optional: spread the backs of the cooled biscuits with melted semi-sweet chocolate (as in chips - almost everyone has these for chocolate chip cookies). Set the biscuits chocolate side up on the rack until chocolate hardens.
  • Store in an airtight tin -if storage is even necessary! They will go fast.

~ Bet You Can't Eat Just One

These tender, melt in your mouth biscuits are so addictive, bet you can't eat just one. I've been making these for years and depending what I'm serving them with, I sometimes mix a butter and garlic salt mixture and brush the tops a few minutes before finished....so darn good! Enjoy!

Time 25m

Number Of Ingredients 8

2 c flour
2 tsp baking powder
1/2 - 3/4 tsp dried thyme
1/4 tsp baking soda
1/2 tsp salt
1/4 c cold butter - cut into chunks
1 c buttermilk - dont substitute
1 c fresh shredded cheddar cheese

Steps:

  • 1. In a large bowl, whisk together the flour, salt, thyme, baking powder and soda. Using a pastry blender, cut in the butter until the mixture resembles cornmeal.
  • 2. Preheat oven to 450 degree F. Add to this the milk and cheese and stir with a spoon for 25 - 30 seconds.
  • 3. Drop 1 1/2 inch apart but heaping tablespoonfuls on an ungreased baking sheet. Sprinkle with remaining cheese and bake for 12 - 13 minutes or until golden.
  • 4. Melt in your mouth good! Best served straight from the oven.

Tips:

  • Use cold butter. This will help to create a flakier biscuit. You can also freeze the butter for 30 minutes before grating it, which will make it even easier to work with.
  • Don't overwork the dough. Overworking the dough will make the biscuits tough. Mix the ingredients just until they come together.
  • Let the dough rest before baking. This will help the gluten in the flour to relax, which will make the biscuits lighter and flakier. You can rest the dough for 30 minutes at room temperature or overnight in the refrigerator.
  • Bake the biscuits in a hot oven. This will help the biscuits to rise quickly and evenly. Bake the biscuits at 450 degrees Fahrenheit for 10-12 minutes, or until they are golden brown.
  • Serve the biscuits warm. Biscuits are best served warm out of the oven. You can also reheat them in a warm oven or toaster oven.

Conclusion:

These biscuits are the perfect addition to any meal. They are easy to make and can be customized to your liking. You can add different herbs, cheeses, or fruits to the dough to create a variety of flavors. Biscuits are also a great way to use up leftover ingredients. So next time you are looking for a quick and easy recipe, give these biscuits a try. You won't be disappointed!
