Steps:
- 1. In the mixing bowl of bread machine add all ingredients in order given. Set on dough cycle (just mixing and rising). The dough cycle usually lasts about 1 1/2 hours.
- 2. Or... alternatively, add all ingredients to a large bowl and knead together until a smooth dough forms. Add extra flour if necessary. Cover and let rise in a warm place for about 1 1/2 hours.
- 3. When dough cycle is complete, or dough is approximately doubled in size, remove dough and place in oiled baking pans. You can use a Pullman pan or two bread pans.
- 4. Let dough rise in baking pans for 30 minutes.
- 5. Preheat oven to 350F.
- 6. Slash the top with a sharp knife and then bake for 35 minutes or until browned on top and cooked through.
BIMINI BREAD ABM
We enjoyed this sweet white bread when we visited Fort Lauderdale. I never had this and one bite I couldn't stop eating it! You can serve with honey butter. This is a sweet bread. The bread we enjoyed was not dense. The Bimini (meaning "two islands") islands, consisting of North, South and East Bimini and Cay Sal Bank, are part of the Bahamian island chain, located south of Florida in the Caribbean. With research and what I had in my pantry this is what I created.I must say it is quite close to what we had in Florida a restaurant named Aruba. Use of the coconut does not bring it's flavor but tenderness.

Steps:
- Place ingredients in ABM according to your machines directions.
- Set on dough cycle.
- Let mix when all come together do adjust flour or milk if needed. But be careful not to add to much flour for it will produce a dense bread.
- When dough cycle is complete, dough should be approximately doubled in size, remove dough, punch down and place in oiled baking pans. 1 Pullman pan, which is quite large or two bread pans as I used.
- Place dough in oiled pans cover with plastic wrap and let raise 45 - 60 minutes till double the size.
- Preheat oven to 350 degrees.
- Score each loaf and bake for 35 minutes.
- Mix the butter and honey together and spread 1/4 of it on the hot bread.
- Sprinkle with powdered sugar.
- Serve at table whole for guests to rip apart while hot and top with remaining butter mixture.

- Start at the top (recommended) or the bottom of the list, and put all the ingredients into the bread machine. Just make sure the salt and wet stuff stays away from the yeast until it mixes. If you like the old fashioned way, that will work too - just use your usual process.
- For rolls, use the dough cycle. When that cycle is done, dump it out on a floured surface and cut everything into even quarters, twice. Put the wads, evenly spaced, on a lightly oiled cookie sheet. Let them rise once more in a warm area covered with waxed paper for a half hour or a little longer until they have roughly doubled in size, depending on how knocked down they got while cutting. Cook in an oven, preheated to 375 degrees, for 20 minutes or until they are nicely browned top and bottom. Brush with melted butter if desired.
