EASTERN NC PULLED PORK BBQ IN A CROCK POT

Eastern NC Pulled Pork BBQ in a Crock Pot image

It's the best way to make BBQ short of having a pig pickin'! Eastern NC BBQ done the right way. No tomato in sight! The taste reminds me of Smithfield's, which is the best BBQ in my opinion. This BBQ goes great in a sandwich topped with a scoop of sweet coleslaw, side of hushpuppies, and sweet tea. Mmmmmm. Enjoy!

Time 12h20m

Yield 18-24 serving(s)

Number Of Ingredients 12

1 cup white vinegar
1 cup cider vinegar
1 tablespoon brown sugar
1 tablespoon cayenne pepper
1 tablespoon hot pepper sauce (e.g. Tabasco(TM)
1 teaspoon salt
1 teaspoon ground black pepper
1 large vidalia onion (or other type of sweet onion)
8 -12 lbs pork shoulder
1 cup white vinegar
1 cup apple cider vinegar
dry rub seasonings (any good one) (optional)

Steps:

  • Quarter and slice the onion into little arches. Place about half an onion's worth in the crock pot as to line the bottom.
  • Place the whole pork shoulder into the crock-pot. Take just a small amount of sauce to dampen the shoulder.
  • Cover with a generous coating of spice rub, if desired.
  • Top with remaining onion slices. Take 75% of the sauce and pour it around the pork shoulder. Then pour the white and cider vinegars around the pork.
  • Cover and cook on low for 8-12 hours.
  • When cooking is complete, remove cover and then carefully pull the bone out of the pork shoulder (BE CAREFUL! IT WILL BE HOT!).
  • Carefully remove the meat and half of the onions from the crock-pot and put into a large bowl, leaving behind as much of the cooked vinegar solution behind as possible. A slotted spoon may be needed.
  • Then with two forks (or your hands once the meat has cooled a little, if you are so inclined), "pull" (shred) the meat.
  • Pour in most of the remaining, "uncooked" sauce, saving a little to add to BBQ sandwiches as desired. (Personally, I prefer using Texas Pete on my sandwiches.).
  • Serve as sandwich or BBQ plate.
  • Enjoy!

SLOW COOKER BBQ PULLED PORK

Slow Cooker BBQ Pulled Pork image

If you've spent any time on Pinterest or food blogs, you've likely come across a recipe for three-ingredient barbecue pulled pork that can be made in the slow cooker. Methods and ingredients vary, but the recipe almost always calls for boneless pork shoulder, some sort of dark cola (usually Dr Pepper or root beer) and barbecue sauce. Dubious? We were too, so we asked the members of our NYT Cooking Community Facebook page if anyone had ever made it and if they liked it. We received more than 150 very opinionated responses. Many readers have come up with their own clever twists, like using coffee or beer in place of cola, adding onions or chipotles, rubbing the meat with a spice blend and searing the meat before cooking. We tried cooking it a few different ways and found we liked this adaptation best. It calls for a few more ingredients and an extra step or two, but it's got layers of flavor and it's still mostly fuss-free. (You can find the pressure-cooker version of this recipe here.)

Categories     meat, sandwiches, main course

Time 10h

Yield 6 to 8 servings

Number Of Ingredients 11

1 tablespoon garlic powder
1 tablespoon onion powder
2 teaspoons hot or sweet smoked paprika
2 teaspoons salt, plus more to taste
1 teaspoon black pepper, plus more to taste
3 to 4 pound boneless pork shoulder or pork butt, trimmed of most of its excess fat
2 tablespoons vegetable oil, plus additional for greasing
1 yellow onion, chopped (optional)
1 (12-ounce) can dark soda, like Dr Pepper, root beer, cola or birch beer
1/2 to 1 1/2 cups homemade or store-bought barbecue sauce
Hot sauce (optional)

Steps:

  • In a small bowl, combine the garlic and onion powders, smoked paprika, salt and black pepper. Rub the spice mixture all over the pork. If you have time, cover with plastic wrap and refrigerate for 2 hours or up to overnight. If you don't, no worries; proceed to Step 2.
  • Lightly grease the crock of a slow cooker. Heat 2 tablespoons vegetable oil in a large skillet over medium-high. Sear the pork until golden brown on all sides, about 2 minutes each side. Add onion, if using, to the slow cooker. Add the pork on top of the onion. Pour soda over the pork and set the slow cooker to low for 6 to 8 hours, until the meat has collapsed and shreds easily.
  • Drain most of the liquid from the slow cooker and shred the meat directly in the pot. Add about 1/2 cup of the barbecue sauce and stir to combine. (At this point, if you like crisp bits in your pulled pork, you can spread the shredded pork on a sheet pan and place under a broiler for a couple minutes then return to the slow cooker.) Taste and add more barbecue sauce, hot sauce, salt or pepper, if desired. Serve with soft rolls and extra sauce on the side.

Tips:

  • Choose the right cut of pork. Pork shoulder or pork butt is the best cut for pulled pork because it is a fatty and flavorful cut that will become tender and juicy when cooked slowly.
  • Use a good quality barbecue sauce. The barbecue sauce is what will give your pulled pork its flavor, so it is important to use a good quality sauce that you enjoy. You can use a store-bought sauce or make your own.
  • Cook the pork on low heat for a long time. The key to tender and juicy pulled pork is to cook it on low heat for a long time. This will allow the pork to break down and become fall-apart tender.
  • Shred the pork with two forks. Once the pork is cooked, shred it with two forks. This is the easiest way to shred the pork and it will help to keep it moist.
  • Serve the pulled pork with your favorite sides. Pulled pork can be served with a variety of sides, such as coleslaw, potato salad, baked beans, or macaroni and cheese.

Conclusion:

Pulled pork is a delicious and versatile dish that can be enjoyed by people of all ages. It is a great option for a party or a weeknight meal. With a little planning and preparation, you can easily make pulled pork at home. So what are you waiting for? Give this recipe a try today!
