THE BEST MEATLOAF

The Best Meatloaf image

We opted for an all-beef meatloaf rather than the traditional mix of beef, veal and pork because we wanted that satisfying big beef flavor. Milk adds richness and tenderizes the meat, preventing it from getting tough or dry. We also cook the onion instead of adding it raw as many recipes suggest, which imparts a welcome sweetness and eliminates that harsh raw onion flavor.

Time 1h30m

Yield 8 servings

Number Of Ingredients 12

2 large eggs, lightly beaten
1/3 cup milk
3 tablespoons Worcestershire sauce
Kosher salt
1/4 cup olive oil
1 large onion, chopped
2 cloves garlic, finely grated
1 tablespoon thyme leaves, chopped
Freshly ground pepper
1/2 cup ketchup
2 pounds 80/20 ground beef chuck
1/2 cup panko

Steps:

  • Arrange a rack in the center of the oven and preheat to 450 degrees F. Line a rimmed baking sheet with foil.
  • Whisk the eggs, milk, Worcestershire sauce and 2 teaspoons salt in a large bowl until completely combined. Heat the oil in a large skillet over medium-high heat. Add the onion, garlic, thyme, 1/2 teaspoon salt and 1 teaspoon pepper and cook, stirring occasionally, until the onions are tender and lightly golden brown, 8 to 10 minutes.
  • Add 3 tablespoons of the ketchup and cook until most of the moisture has evaporated and the mixture is thick and brick red colored, 3 to 4 minutes. Remove the skillet from the heat and let the onions cool slightly. Then add them to the beaten eggs and mix to combine.
  • Add the beef to the egg and onion mixture. Break up the meat with a fork or wooden spoon, and then mix to thoroughly combine; you don't want to see any lumps of raw beef. Add the panko and mix to combine. Stir the meat vigorously with a wooden spoon for about 7 seconds; it will become more homogenous and tackier.
  • Transfer the meat to the prepared baking sheet and shape into a 9-by-5-inch loaf. Smooth the top and evenly spread the remaining ketchup over top. Bake for 5 minutes, and then reduce the oven temperature to 350 degrees. Continue to bake until an instant-read thermometer inserted into the center of the loaf registers 150 degrees F, 30 to 35 minutes. Allow the meatloaf to rest for 20 minutes before slicing.

BILL BLASS'S MEATLOAF

Bill Blass's Meatloaf image

This homespun, bacon-wrapped version of the American classic is attributed to Bill Blass, the world-famous clothing designer of the 60s, 70s and 80s, who is perhaps best known for dressing First Lady Nancy Reagan and the upper echelons of New York society. While he became hugely successful - he reportedly sold his business for $50 million in 1999 - his culinary tastes remained firmly Midwestern. From his 2002 obituary in The Times: "A man of robust but simple tastes who would go out of his way for a hamburger, Mr. Blass would serve guests his own meatloaf recipe, followed perhaps by lemon meringue pie. He always maintained, only partly in jest, 'My claim to immortality will be my meatloaf.'" This is his recipe.

Time 1h15m

Yield 6 to 8 servings

Number Of Ingredients 16

1 cup chopped celery
1 onion, chopped
3 tablespoons butter
2 pounds ground beef sirloin
1/2 pound ground veal
1/2 pound ground pork
1/2 cup chopped fresh parsley
1/3 cup sour cream
1/2 cup soft bread crumbs
1/4 teaspoon dried thyme
1/4 teaspoon dried marjoram
Kosher salt and freshly ground black pepper to taste
1 egg
1 tablespoon Worcestershire sauce
1 1/2 cups Heinz chili sauce
3 slices bacon

Steps:

  • Preheat the oven to 350 degrees. Oil an 8-by-4-inch loaf pan. In a heavy skillet over medium heat, saute the celery and onion in the butter until soft, about 5 minutes. Scrape into a large mixing bowl and cool.
  • When the onions are cool enough to handle, add the meats, parsley, sour cream, bread crumbs, thyme, marjoram and salt and pepper to the bowl. Whisk the egg with the Worcestershire sauce and add to the mixture. Using a wooden spoon or your hands, combine the mixture and mold into the shape of a loaf.
  • Place the meatloaf in the prepared pan. Top with the chili sauce and bacon slices. Bake until firm and nicely browned, about 1 hour.

MEAT LOAF

Meat Loaf image

Nothing says classic comfort like Ina Garten's Meatloaf recipe from Barefoot Contessa on Food Network.

Provided by Ina Garten

Categories     main-dish

Time 1h25m

Yield 6 servings

Number Of Ingredients 12

1 tablespoon good olive oil
3 cups chopped yellow onions (3 onions)
1 teaspoon chopped fresh thyme leaves
2 teaspoons kosher salt
1 teaspoon freshly ground black pepper
3 tablespoons Worcestershire sauce
1/3 cup canned chicken stock or broth
1 tablespoon tomato paste
2 1/2 pounds ground chuck (81 percent lean)
1/2 cup plain dry bread crumbs (recommended: Progresso)
2 extra-large eggs, beaten
1/2 cup ketchup (recommended: Heinz)

Steps:

  • Preheat the oven to 325 degrees F.
  • Heat the olive oil in a medium saute pan. Add the onions, thyme, salt, and pepper and cook over medium-low heat, stirring occasionally, for 8 to 10 minutes, until the onions are translucent but not brown. Off the heat, add the Worcestershire sauce, chicken stock, and tomato paste. Allow to cool slightly.
  • In a large bowl, combine the ground chuck, onion mixture, bread crumbs, and eggs, and mix lightly with a fork. Don't mash or the meat loaf will be dense. Shape the mixture into a rectangular loaf on a sheet pan covered with parchment paper. Spread the ketchup evenly on top. Bake for 1 to 1 1/4 hours, until the internal temperature is 160 degrees F and the meat loaf is cooked through. (A pan of hot water in the oven, under the meat loaf, will keep the top from cracking.) Serve hot.

Tips:

  • Use high-quality ground beef: The better the quality of the beef, the better the meatloaf will be. Look for ground beef that is at least 80% lean.
  • Season the beef well: Don't be afraid to use plenty of seasonings in the beef mixture. This will help to give the meatloaf a lot of flavor.
  • Use a variety of bread crumbs: Using a combination of different types of bread crumbs, such as panko, Italian, and plain, will give the meatloaf a more complex texture.
  • Add some vegetables to the beef mixture: This will help to add moisture and flavor to the meatloaf. Some good options include onions, celery, carrots, and peppers.
  • Don't overmix the beef mixture: Overmixing the beef mixture will make the meatloaf tough. Just mix the ingredients until they are well combined.
  • Shape the meatloaf into a loaf: Use your hands to shape the beef mixture into a loaf shape. Make sure the loaf is evenly shaped so that it cooks evenly.
  • Cook the meatloaf in a preheated oven: This will help to ensure that the meatloaf cooks evenly. The ideal cooking temperature for meatloaf is 350 degrees Fahrenheit.
  • Baste the meatloaf with sauce: Basting the meatloaf with sauce while it cooks will help to keep it moist and flavorful.
  • Let the meatloaf rest before slicing: Before slicing the meatloaf, let it rest for 10-15 minutes. This will help the juices to redistribute throughout the meatloaf, making it more tender and flavorful.

Conclusion:

Billionaire's Meatloaf is a delicious and easy-to-make dish that is perfect for any occasion. The combination of high-quality ground beef, a variety of seasonings, and vegetables makes this meatloaf a truly special dish. Whether you are serving it to your family or to a group of friends, this meatloaf is sure to be a hit.
