BIG SOFT GINGER COOKIES

Big Soft Ginger Cookies image

I love these. I used to have a recipe for Soft Ginger Snaps and this is pretty close to those.

Provided by Sue Kenitzer

Categories     Cookies

Time 30m

Number Of Ingredients 12

2 1/4 c all purpose flour
2 tsp ground ginger
1 tsp baking soda
1 tsp ground cinnamon
1/2 tsp ground cloves
1/4 tsp salt
3/4 c butter or margarine, softened
1 c white sugar
1 egg
1 Tbsp water
1/4 c molasses
2 Tbsp white sugar

Steps:

  • 1. Preheat oven to 350 degrees F. Sift together the flour, ginger, baking soda, cinnamon, cloves, and salt.
  • 2. In a large bowl, cream together the butter and 1 cup sugar until light and fluffy. Beat the egg, and stir into the water and molasses. Gradually stir the sifted ingredients into the molasses mixture. Shape dough into walnut size balls, and roll them into the remaining 2 tablespoons of sugar. Place the cookies 2 inches apart onto an ungreased cookie sheet, and flatten slightly.
  • 3. Bake for 8 to 10 minutes in the preheated oven. Allow cookies to cool on baking sheet for 5 minutes before removing to a wire rack to cool completely. Store in an air tight container.

Tips:

  • Chill the dough: Chilling the dough for at least 30 minutes before baking helps the cookies hold their shape and prevents them from spreading too much.
  • Use fresh ginger: Fresh ginger provides the best flavor for these cookies. If you don't have fresh ginger, you can use ground ginger, but the flavor will be less intense.
  • Don't overmix the dough: Overmixing the dough will make the cookies tough. Mix the dough just until the ingredients are combined.
  • Bake the cookies until they are just set: The cookies should be slightly soft in the center when you take them out of the oven. They will continue to firm up as they cool.
  • Store the cookies in an airtight container: The cookies can be stored in an airtight container at room temperature for up to 3 days.

Conclusion:

These big, soft ginger cookies are the perfect treat for any occasion. They are easy to make and always a hit with friends and family. With their warm, spicy flavor and chewy texture, these cookies are sure to become a favorite. So next time you're looking for a delicious and easy-to-make cookie recipe, give these big, soft ginger cookies a try!
