1/2 tsp. ground turmeric
Freshly ground black pepper

BIG GREEN SALAD

Yield Makes 6 servings

Number Of Ingredients 7

2 medium heads romaine
1/2 seedless cucumber
2 celery ribs, thinly sliced
3 tablespoons extra-virgin olive oil
1 1/2 tablespoons fresh lemon juice
1 teaspoon mild honey
1 teaspoon Dijon mustard

Steps:

  • Tear romaine into bite-size pieces and put in a salad bowl. Halve cucumber lengthwise, then thinly slice diagonally and add to romaine along with celery.
  • Whisk together remaining ingredients with 1/2 teaspoon salt and 1/4 teaspoon pepper in a small bowl until emulsified. Add to salad and toss to coat.

Tips:

  • Use a variety of greens: Arugula, spinach, kale, romaine, and butterhead lettuce are all great options. Mixing greens adds color, texture, and flavor to your salad.
  • Add some crunchy vegetables: Cucumbers, carrots, celery, and radishes are all good choices. Crunchy vegetables add texture and contrast to the soft greens.
  • Don't forget the protein: Beans, lentils, grilled chicken, or tofu are all great ways to add protein to your salad. Protein helps to make the salad more filling and satisfying.
  • Add some healthy fats: Nuts, seeds, and avocado are all good sources of healthy fats. Healthy fats help to keep you feeling full and satisfied after eating.
  • Use a light dressing: A simple vinaigrette or lemon-tahini dressing is a great way to add flavor to your salad without weighing it down. Heavy dressings can make your salad greasy and unhealthy.
  • Add some herbs and spices: Herbs and spices can add a lot of flavor to your salad. Try adding some fresh basil, oregano, thyme, or rosemary. You can also add some ground cumin, coriander, or paprika.

Conclusion:

A big green salad is a healthy and refreshing meal that can be enjoyed for lunch or dinner. It's a great way to get your daily dose of fruits, vegetables, and protein. With a little creativity, you can create a big green salad that is both delicious and nutritious.
