Steps:
- Preheat oven to 325.
- In a very large bowl put hamburger, crackers crumbled,salt, essence, boullion powder, and black pepper - set aside.
- Cut onion into larger pieces and put it in the food processor with the garlic -- pulse until pieces are small. Dump onion mixture into the bowl with the meat.
- Beat the three eggs (in the food processor if you don't want to dirty a bowl) and add them to the meat bowl.
- Add the tomato sauce to the meat bowl and use your hands to mix all very well (I like to wear rubber gloves to save on clean-up time).
- Divide meat mixture in half. Form into two loaves on the botton of your broiler pan or a roasting pan. Leave room between loaves for even baking.
- In smaller bowl mix together with a fork; ketchup, brown sugar, water, mustard and cider vinegar. This is your topping -- Brush tops and sides of loaves with this before baking and again while baking.
- Bake for 1 hour and 15 minutes to 1 hour and 25 minutes.
- When I remove the pan from the oven I like to pour off the excess oil in the bottom of the pan. Let cool for about 5 minutes before serving. Slice thick and pieces should hold together well.
DA BEEF LOVER'S HALF TIME STUFFED MEATLOAF

- Preheat oven to 375 degrees F (190 degrees C). Lightly grease a shallow roasting pan. Prepare instant rice according to package directions.
- In a large bowl, mix together ground sirloin, ground round, egg, chopped onion, green pepper, mushrooms and cooked rice. Season with garlic powder, salt and pepper.
- On clean counter top, arrange sheets of wax paper approximately 1 1/2 feet long by 1 foot wide. Place meat mixture on wax paper, and flatten into a large square, about 1/2 inch thick (the thinner the better). Sprinkle with more garlic powder, then layer with parmesan, spinach, ham, salami and Swiss cheese. Using the wax paper, roll the meat as tightly as possible while removing the wax paper as you go. Tuck the two open ends into the meatloaf itself, and with hands lightly coated in vegetable oil, shape into a loaf. While lifting with the wax paper, transfer to shallow roasting pan, then slide wax paper out from underneath.
- Bake in preheated oven for 1 hour and 10 minutes, or until meat is no longer pink and juices run clear. Allow to cool 15 minutes before serving.

Steps:
- Preheat oven to 350 degrees. Heat corn oil in a large skillet, and saute onions until light golden brown. Add garlic at the last minute, and brown quickly. Remove to a bowl with a slotted spoon, and saute green peppers in remaining oil. Add to bowl, and refrigerate.
- Cut crusts off bread, cube and soften with water in a strainer. Squeeze out excess liquid.
- In a large bowl, thoroughly blend meats and bread, working them together with your hands lightly. Add onion-garlic- green pepper mixture and all the other ingredients, Blend thoroughly.
- Place mixture in a loaf pan and score a crisscross design along the top with a knife. Bake 50 minutes, pour off accumulated fat, add your favorite tomato sauce, and continue baking for 20 minutes more.
