2 eggs
1 can (15 ounces) fruit cocktail, undrained
1 teaspoon vanilla extract
2-1/4 cups all-purpose flour
1-1/2 teaspoons baking soda
1 teaspoon salt
1-1/3 cups sweetened shredded coconut
1 cup chopped walnuts
GLAZE:
1/2 cup sugar
1/4 cup butter, cubed
2 tablespoons milk
1/4 teaspoon vanilla extract

Steps:

  • In a large bowl, beat sugar and eggs until blended. Beat in fruit cocktail and vanilla. Combine the flour, baking soda and salt; add to the creamed mixture until well blended. , Pour into a greased 15x10x1-in. baking pan. Sprinkle with coconut and walnuts. Bake at 350° for 20-25 minutes or until a toothpick inserted in the center comes out clean. Cool on a rack for 10 minutes. , In a small saucepan, bring the sugar, butter and milk to a boil. 1 (8 ounce) can fruit cocktail
¼ cup butter, softened
⅓ cup white sugar
1 egg
¼ teaspoon vanilla extract
1 ¼ cups all-purpose flour
¼ teaspoon baking powder
¼ teaspoon baking soda
¼ teaspoon salt
1 tablespoon maraschino cherry juice
½ cup flaked coconut
¼ cup maraschino cherries, chopped

Steps:

  • Drain the fruit cocktail and reserve 1/3 cup of the syrup. Add the 1 tablespoon maraschino cherry syrup to the reserved fruit cocktail syrup. Chop the drained fruit, and set it aside.
  • Stir together in a bowl the flour, baking soda, baking powder, and salt.
  • In a large bowl, cream together the butter or margarine and sugar. Beat in the egg and vanilla extract.
  • Add the flour mixture, alternating with the syrups, to the creamed mixture. Mix well. Stir in the chopped fruit, the coconut and the cherries.

1 c all purpose flour
1 c sugar
1 tsp baking soda
1/2 tsp salt
1 tsp vanilla extract
1 c fruit cocktail, drained
1/4 c brown sugar
1/4 c nuts, chopped

Steps:

  • 1. Combine all ingredients together, except brown sugar and nuts. Mix until well-blended.
  • 2. Pour into greased 13" x 9" x 2" pan.

I did a search and couldn't find fruit cocktail squares like these. My mom used to make them every Christmas when I was a kid. They're very simple to make and really tasty. This recipe calls for an 8 x 8 pan, but I've made it in a 9 x 9 and just added a little more fruit cocktail. You can add a layer of whipped cream to the whole pan, or a dollop to each square when serving. They're really nice on their own too. Hope you enjoy! :)

28 graham crackers, crushed
1 cup butter
1 cup fruit cocktail, drained
1 (300 ml) can sweetened condensed milk
2 tablespoons lemon juice
