  • Note: about 1 minute before they are done it helps to lift and bang the sheet on the rack and turn it.

  • Other note: you can use all butter/margarine to replace the shortening and probably would work vice versa as well.

Number Of Ingredients 10

1/2 cup granulated sugar
1/2 cup packed brown sugar
1/2 cup peanut butter
1/4 cup shortening
1/4 cup butter or margarine, softened
1 egg
1 1/4 cups Gold Medal® all-purpose flour
3/4 teaspoon baking soda
1/2 teaspoon baking powder
1/4 teaspoon salt

Steps:

  • 1. Mix sugars, peanut butter, shortening, butter and egg in large bowl. Stir in remaining ingredients. Cover and refrigerate about 2 hours or until firm. 2. Heat oven to 375ºF. 3. Shape dough into 1 1/4-inch balls. Place about 3 inches apart on ungreased cookie sheet. Flatten in crisscross pattern with fork dipped into sugar. 4. Bake 9 to 10 minutes or until light golden brown. Cool 5 minutes; remove from cookie sheet. Cool on wire rack.

Tips:

  • Ensure your peanut butter is at room temperature. This allows it to blend seamlessly with other ingredients, resulting in a smooth, uniform cookie dough.
  • Don't overmix the dough. Overmixing can lead to tough, dry cookies. Mix just until the ingredients are combined.
  • Use a cookie scoop to portion the dough. This helps ensure that the cookies are all uniform in size and shape, which promotes even baking.
  • Bake the cookies at 350°F (175°C). This temperature is hot enough to set the cookies without overcooking them.
  • Let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack. This helps them to set and firm up.
