1/4 cup shortening
1/2 cup milk
1 1/2 teaspoons baking powder
1 teaspoon grated lemon peel, if desired

Tips:

  • Ensure your oven is preheated before starting the recipe. This helps the batter rise evenly and prevents the blueberries from sinking to the bottom of the pan.
  • Use fresh or frozen blueberries for the best flavor and texture. If using frozen blueberries, thaw them slightly before adding them to the batter.
  • Do not overmix the batter. Overmixing can make the buckle tough.
  • Bake the buckle until a toothpick inserted into the center comes out with just a few moist crumbs attached. Overbaking will make the buckle dry.
  • Let the buckle cool for at least 15 minutes before serving. This allows the flavors to meld and the buckle to set.
