I make several versions of cole slaw but we sometime just want this. I tried for several years before getting this recipe right. This is a much healthier version than the KFC clone by Todd Wilbur, and still TASTES GREAT! I changed ingredients to make it more approachable on a low cal, low carb or diabetic diet. It's perfect for me! I thought I had posted this before but had not, so I am really happy I saved it! I don't want to lose this recipe!!! Cook time is time to chill, so prep is really quick. Make it early in the day and it will be ready for afternoon picnics and barbecues.
