I have memories of my first job making dozens of these roasted clams for service every night. The smell of them cooking is so nostalgic for me. I always like to bring that sense of nostalgia to my table while creating new memories.

36 littleneck or Manila clams
2 ounces bacon, minced
1 tablespoon olive oil, optional
2 shallots, minced
1/2 red bell pepper, minced
Kosher salt
Pinch crushed red pepper flakes
3 garlic cloves, minced
1 teaspoon fresh thyme leaves, minced
1 teaspoon fresh oregano leaves, minced
1/4 cup white wine
1/4 cup reserved clam cooking juice
1 teaspoon minced parsley
4 ounces (1 stick) unsalted butter, softened
1/2 cup panko
1 garlic clove, smashed
Kosher salt
2 tablespoons extra-virgin olive oil
Pinch crushed red pepper flakes
2 tablespoons minced parsley
2 lemons, cut into wedges, for serving

Steps:

  • For the clams: Add the clams to a large pot or large saute pan with a lid. Add 1/2 cup water and cover the pan. Bring to a simmer over medium-high heat and steam until the clams open, 6 to 10 minutes. Discard any clams that do not open. Reserve 1/4 cup clam juice.
  • When they are cool enough to handle, remove the empty top shells of each clam and use your fingers to gently pull the clams from the bottom shell; reserve the bottom shells. Finely chop the clams and reserve.
  • Cook the bacon in a medium saucepan over medium-low heat until well crisp and rendered, 8 to 10 minutes.
  • Remove the bacon to a paper towel-lined plate using a slotted spoon, leaving the fat in the pan (if the pan seems dry, add a touch of oil). Add the shallots, peppers, a pinch of salt and the crushed red pepper flakes and cook until soft and starting to caramelize, 8 to 10 minutes. Add the garlic and thyme to the pan and cook until the raw-garlic flavor is gone and the shallots are sweet, 6 to 8 minutes.
  • Add the oregano leaves to bloom, then deglaze with the wine and 1/4 cup reserved clam juice and cook until the mixture is reduced by about 80 percent, about 4 minutes. Remove from the heat and stir in the bacon and parsley to combine. Place the bacon mixture in a bowl over an ice bath, stir in the butter and clams and cool slightly until just warm. Taste the mixture and season with salt.
  • For the breadcrumbs: Preheat the oven to 425 degrees F.
  • Put the panko, crushed garlic clove and a pinch of salt in dry skillet over medium heat and toast, stirring and tossing constantly till lightly browned, about 5 minutes. Transfer the panko mixture to a bowl and stir in the extra-virgin olive oil, pepper flakes and parsley with a fork. Discard the crushed garlic clove.
  • Stuff each clam shell generously with about 1 tablespoon of the clam mixture and sprinkle with enough breadcrumbs to coat, pressing lightly so the breadcrumbs stick. Place the stuffed clams on a metal tray or cast-iron pan. Bake until hot and golden, 10 to 15 minutes. Serve with lemon wedges.

30 quahogs (chowder clams)
3 large elephant garlic cloves, minced
1 large vidalia onion, minced
1 red pepper, diced
1 orange bell pepper, diced
1 tablespoon dried oregano
1 tablespoon dried basil
1/4 cup extra virgin olive oil
1 1/2 cups cheese, I buy a bag of Italian five cheeses already shredded (parmesan, mozzarella, asagio, provolone)

Steps:

  • Saute the first six ingredients in olive oil until softened but not browned.
  • Steam clams in batches and remove as they JUST BEGIN TO OPEN. Allow to cool and reserve clam broth.
  • Remove clams from shells and save half of each shell.
  • Process clams with a little broth in a food processor until a little chunky.
  • Combine clams with first six ingredients and add 1 cup of mixed cheeses, mix well.
  • Add breadcrumbs, mixing completely until it holds together like a stuffing; if it seems a little dry add more clam broth.
  • Fill clam shells with this mixture and bake at 350 degrees until golden brown.
  • Serve immediately and enjoy!

4 strips bacon, cut into bite-size pieces
2 cloves garlic, minced
2 medium shallots, minced
One 1-inch knob fresh ginger, minced
1/4 cup Italian flavored breadcrumbs
3 tablespoons finely grated Parmesan
2 cups chicken stock
1/4 cup dry white wine
1 pound Manila clams, scrubbed
Two 4-ounce packages instant ramen noodles
Fresh basil and red pepper flakes, for garnish, optional

Steps:

  • In a large saucepan, add the bacon and cook over medium-high heat until the bacon begins to brown, a couple of minutes. Add the garlic, shallots and ginger and cook, stirring occasionally, until the shallots have softened, about 5 minutes.
  • Use a slotted spoon to transfer half of the bacon mixture to a medium bowl. Add the breadcrumbs and Parmesan to this same bowl. Stir to combine and set aside to use as topping later.
  • Add the stock and wine to the saute pan with the remaining bacon mixture to deglaze, scraping up any cooked bits stuck to the bottom. Add the clams, then cover and cook until the clams begin to open, about 10 minutes. Push the clams to one side and add the ramen noodles, then cook, stirring occasionally, until tender, about 3 minutes.
  • Turn the broiler on.
  • Pour the saucepan components into a 14-inch cast-iron pan and sprinkle the breadcrumb mixture over the top. Broil until the breadcrumbs are golden brown, about 5 minutes. Serve sprinkled with basil and red pepper flakes, if desired.

My stepfather-in-law made Clams Casino as an hors d'oeuvre for Thanksgiving 2007. I liked his version so much that I had to make something similar for my annual 2007 Christmas hors d'oeuvres party for my friends. He used bread crumbs in his topping, which is non-traditional in Clams Casino, but gives the dish a toasted texture and flavor. I took my best guess at his recipe, doubled it in order to serve 12 and added a few extra flavors for zing. It was a success with the seafood lovers at the party--especially my husband!

12 cherrystone clams
1/4 cup butter
1/2 cup onion, chopped
1/2 cup celery, chopped
1/2 cup red pepper, chopped
1 garlic clove, minced
1 tablespoon lemon juice, fresh
1 tablespoon Worcestershire sauce
1/8 teaspoon red pepper flakes
1/4 teaspoon black pepper, freshly ground
1/4 cup breadcrumbs, dried, unseasoned
4 slices bacon, cooked until crisp and crumbled
rock salt (or coarse sea salt)

Steps:

  • Under cold running water, rinse clams and scrub with a soft-bristled brush to remove as much sand as possible. (Note: Clams should be tightly closed or snap shut when touched or placed under cold water. If any are already open and do not close after manipulation, discard those particular clams immediately to prevent food poisoning.).
  • In an oven-proof shallow dish (pie plate works best), pour in rock salt. Cover bottom of dish evenly with rock salt until 1/4-inch thick.
  • Steam clams until shells begin to open. Carefully remove each clam from steamer and set aside, reserving as much of the juice as possible in the bottom half of each shell.
  • Allow clams to cool until manageable to handle; then carefully break off top half of shell. With a knife, gently separate meat from where it is attached to shell. Then nestle the half of the shell with clam and juice into rock salt, arranging in the best way possible to fit into the baking dish. (Note: This helps keep clam upright and saves juice from spilling out. Plus it makes for a nice presentation!).
  • Preheat oven to 500 degrees.
  • In a large skillet over medium heat, melt butter. Add onion, celery, red pepper and garlic to skillet and sauté until tender.
  • Remove skillet from heat and stir in lemon juice, Worcestershire sauce, red pepper flakes, pepper and crumbled bacon.
  • Sprinkle bread crumbs a little at a time into skillet, stirring into mixture until moisture is absorbed. Use a little less or more of the bread crumbs until desired consistency is met.
  • Spoon a scant amount of the mixture onto each clam.
  • Bake for 6-8 minutes or until clams are just cooked through and topping is golden.
  • Serve immediately.
